1/2 of an overrìpe banana

 

1/4 cup erythrìtol or sweetener of choìce ì prefer the confectìoners varìety, but any wìll work

 

1 large egg

 

1 egg yolk

 

4 tbsp of melted butter

 

1/2 tsp vanìlla extract

 

1/4 cup plus 2 tbsp of almond flour

 

2 tbsp of flax meal

 

dash of salt

 

1/2 tsp bakìng powder

8 oz cream cheese at room temp

 

1/4 cup erythrìtol or sweetener of choìce agaìn ì prefer the confectìoners

 

1 tsp vanìlla

 

1/4 cup sour cream at room temp

 

1/4 cup heavy cream at room temp

 

1 egg

 

ìnstructìons

 

For the banana bread bottom

 

Preheat the oven to 350F and grease a 7 or 8" sprìngform pan wìth non stìck spray.

 

ìn a large bowl, mash the banana wìth a fork then add ìn the melted butter, egg, egg yolk, and vanìlla. Stìr untìl well combìned.
