It's been awhile since I've made a zucchini "pasta" dish for myself but I've been craving one and today was the day to eat it. I love eating fresh, raw foods. Although this one does have ground beef on top it's still deliciously fresh. It's no exaggeration to say I feel more alive and energized when I stay on track with fresh foods. I've been doing some projects with a new client involving food photography for a family cookbook. I've really enjoyed practicing in my own time and although I rarely post food pictures (if you remember the ones I used to have up then you've been with me since the beginning LOL!) I liked this one! It makes me feel fresh and alive just looking at it. So consider this a friendly reminder to eat your veggies today or at least to RSVP a spot for lunch with me next time;) Hugs to you all - Rachel

The topic for today in the Mosaic Montage Monday group is "Clean Eating" where your photo was to include some unprocessed food. I chose some raspberries that we had at home, nothing nicer (and more healthy) than some nice fresh berries.

Grapes, strawberries, coconut milk (next time I will add tapioca or something and see if it can make this look better. The taste is already so good, by the way), along with turkish coffee and simple cookies with oats, soaked barley, walnuts, raisins, coconut milk, and cinnamon.

豆おこわの材料

 

Black peppermint, spear mint, peppermint, french thyme, chive, and some leafy greens: arugula and shungiku. They are all organic and really flavorful.

 

The ingredients for okowa rice (豆おこわ) soaked in the canning jar are genmai, black rice (ancient rice), garbanzos, black beans, lentils, adzuki beans, perilla seeds (called "egoma"), and kelp (dried kombu). Right before cooking them, I add some barley, too.

Dried ginger is useful for smoothies or something like tomato sauce, and quite easy to make.

Spinach (lightly massaged), tomatoes, broccoli, grated daikon radish, grated ginger, ground sesame seeds, cayenne pepper, coriander, turmeric, cinnamon, soy sauce, and apple cider vinegar, along with avocado, sweet potato, and coffee.

Soaking pasta in water with a bit of sea salt overnight seems a good idea. When the tomato sauce has been almost cooked, put the soaked pasta in the same pot, cook them for another few minutes, and it's done.

  

This organic pasta made out of whole spelt by Alce Nero tastes terrific.

It might have been better if I added beans or something, but the ingredients I used this time are, tomato, onion, garlic, turmeric, cacao, chili pepper, black pepper, sea salt, and pasta, with olive oil, oregano, and rosemary on top.

Broccoli, spinach (ちぢみゆきな), purple cabbage, sprouts, and some dressing with walnuts, sesame seeds, ginger, cayenne pepper, coriander, turmeric, cinnamon, soy sauce, and apple cider vinegar, along with coconut milk, kiwi, and soaked raisins.

Coffee jelly, plums, cherries, blueberries, along with broccoli and tomatoes.

  

This coffee jelly is so simple to make, and worth a shot, believe it or not.

Recipe: brew your coffee, boil some agar and water for a few minutes, and after mixing them together, just let the mixture cool in the fridge. Once it is a desired consistency, set it aside, process some bananas and cacao, and pour the banana mixture over top of the jelly. To create a marble pattern, the cacao should be mixed after the bananas have been processed.
