She´s fast and furious in the kitchen too.
The NDI programmers take a traditional weekly lunch at Akbar's Indian Restaurant in Santa Monica. It's gotten to the point that the waitress doesn't even bother handing out menus -- she simply asks, "the usual, right?", and bam, out come half a dozen dishes.
Here, the signature dish that keeps us coming back: Akbar's chicken tikka masala (level 3). Authenticated as Real Chicken Curry by 100% of our British programmers.
1 onion
a few small potatoes
about 10 closed cup mushrooms
a butternut squash
440g tin of tomatoes
440g tin of chick peas
142ml single cream
50g cashew nuts
curry paste
- chop the onion
- peel and dice the potatoes
- quarter the mushrooms
- peel and dice the butternut squash
- heat some oil in a large pan and cook the above for a few minutes
- add the tinned tomatoes and tinned chick peas
- discover that you have only got a tiny dreg of curry paste left. curse yourself momentarily for your stupidity and lack of planning. Add what curry paste there is anyway and pop off to shops during the cooking if time allows to get more*
- simmer for about 25-30 mins until the potatoes and butternut squash are tender
- add a little water during this stage if necessary
- in the meantime cook some rice of your choice
- about 10 mins before the cooking time is up roast the cashews in an oven until they brown slightly, and leave to cool for a bit.
- about 2 mins before the cooking time is up / the rice is ready remove the curry from the heat.
- stir in the cream and add the cashews. re-heat gently and serve.
* this is optional. you may prefer to be more organised than me and make sure you have enough curry paste in the first place. also, if you do have to pop out make sure someone stays at home to make sure house doesn't burn down in your absence.

Recipe:
1 cup sogurt
1 cup finely chopped cilantro
2 tbsps minced ginger
3 tbsps minced garlic
3 tbsps garam masala
6 peppercorns and 2 dry red chilies
3 tbsps lime juice
10 oz firm tofu, cut into 2" chunks
¼ cup raisins
1/8 cup sliced almonds
1 potato, peeled and cubed
1 large onion thinly sliced
1 tsp Chaat Masala (available at most Indian groceries)
Grind the chopped coriander (keep some aside for garnishing) and all other marinade ingredients (except sogurt, raisins and almonds) to a smooth paste in a food processor.
Pour the paste into a large bowl and add sogurt. Mix well. Add the tofu pieces, potatoes, raisins and almonds -cover the bowl and refrigerate, marinating overnight.
Preheat oven to 375 degrees. Spread tofu and potatoes out on aluminum foil and bake until browned, 7-10 minutes per side. Once they are done add them back to the sauce and heat through.
Put the onion rings in a separate bowl and squeeze lime juice over them. Sprinkle with chaat masala and mix well so the onions are fully coated. Garnish the tofu with the onions and some cilantro. Serve with rice and more chili sauce.

INGREDIENTS
2 small or 1 large lemon
1/3 cup olive oil
6 cloves garlic
1/4 tsp salt
Freshly cracked pepper
2 lbs split chicken breasts*
INSTRUCTIONS
Preheat the oven to 275ºF. Squeeze about 3 Tbsp lemon juice from the lemon(s) and slice the remainder. Mince two cloves of the garlic, and peel the remaining 4. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.
Pat the chicken breasts dry with a paper towel. Place them in a glass or ceramic casserole dish. Pour the prepared lemon marinade over the chicken, using a spoon to redistribute the marinade and make sure the surface of the chicken is fully covered. Add the remaining cloves of peeled garlic and sliced lemon around the chicken. If you're sensitive to bitter flavors, add the additional lemon slices after baking. Cover the dish tightly with foil.
Roast the chicken in the preheated oven for 90 minutes. After 90 minutes, turn the oven up to 425ºF, remove the foil, and baste the chicken with the juices from the bottom of the dish. Return the chicken to the oven and roast for an additional 20 minutes without foil at 425ºF, or until the skin is golden brown and crispy.
Let the chicken rest for 5-10 minutes before slicing. Serve warm with the pan drippings spooned over top.

This is a super easy baked chicken wing that you can prepare, place in a hot oven, and an hour later, dinner is on the table. Use that hour to sit and relax. Who am I kidding? It's hard to have a spare minute to sit and relax, much less an hour. But at least, there's no messy frying, no major clean up. You'll have a large bowl and a baking sheet. That's it!
You can make as many or few of the wings as you like. I wanted leftovers so I cooked about 3 pounds of wings which were sold already separated and the tips removed.
Preheat oven to 400 degrees F.
Spray a rimmed baking with nonstick spray.
Place wings in a large bowl and drizzle with olive oil. Sprinkle a liberal amount of taco seasoning onto wings and toss well to completely coat with the oil and seasoning.
Place wings in a single layer on the baking sheet and bake for 45- 60 minutes until wings are cooked through and crispy.
Serve with taco sauce and/or top with chopped cilantro, sour cream for dipping, etc.

VEGETABLE OPTIONS:
any combination of the below ingredients will keep nicely for several days in the refrigerator
chopped greens: typically a mix of romaine spring mix, spinach, arugula, or butter lettuce (rarely all of them, just whichever ones I have on hand at the time)
tomatoes: sliced or chopped
cucumber: sliced or chopped I often remove the seeds, but it isn’t required
corn: canned frozen, or fresh
bell peppers: sliced thin or chopped small
red onions: sliced thin
green onions: sliced thin
PROTEIN OPTIONS:
ground beef or ground turkey: cooked and seasoned generously with Mexican spices or taco seasoning
taco meat with black beans and corn
pulled pork or carnitas: shredded and chopped bite-size
cooked or roasted chicken: shredded or diced
ham: diced
hard boiled eggs: chopped
canned tuna fish: drained well
cooked shrimp or fish
beans: black kidney, or pinto beans
TOPPING OPTIONS:
cheese: shredded diced, or crumbled
avocado: sliced or diced
fruits: diced apples or pears orange slices, fresh berries

salad dressing of your choice: Italian Poppyseed, White Balsamic Vinaigrette, and the absolute BEST Homemade Ranch Dressing are a few of our favorites.
Instructions
Prep the vegetables and place in serving size containers. (I use these containers and these containers to store prepped salads. Add a paper towel to each box to help the produce last longer. Place in the refrigerator until ready to eat.
WHEN READY TO EAT:
Warm the protein of your choice and chop bite-size, if needed. Add the protein to the pre-made salad greens and vegetables. Add the toppings of your choice. Squeeze lime generously over the salad, sprinkle with salt and pepper. Or toss with your favorite salad dressing. Enjoy!

Yummy food, although more than twice what we pay for Tamba on the Strip, which is just as tasty if not better in some respects. (Tamba has better pakora, but can't always be counted on to serve a paneer dish, and some days I just hanker for paneer.)
Tamba is also buffet, so there is a greater variety, and we usually get salad (cucumber yogurt) and dessert (gulab jamun or the "orange thing").
So, for the price, this was not a great decision. (Also note that the menu in the restaurant is a little more expensive than the one online - there is a notice taped inside saying that vegetarian dishes are now a dollar more.)
However, for the experience of trying a new place, getting exactly what we wanted (two paneer dishes!), getting to finally try kulcha, and taking some of the bread and sauce home, it was worth it.
Maybe someday we'll be back. The people there are pleasant and the location (west Sahara) is easier than negotiating the Hawaiian Marketplace parking lot on the Strip.. For now, though, we'll be doing our bit to stimulate the economy in smaller measures.

INGREDIENTS
1 lb chicken
1.5 cups chicken broth
2 gàrlic cloves, finely minced
1 4.5oz càn chopped green chiles
1 diced jàlàpeno
1 diced green pepper
1/4 cup diced onion
4 tbsp butter
1/4 cup heàvy whipping creàm
4 oz creàm cheese
2 tsp cumin
1 tsp oregàno
1/4 tsp càyenne (optionàl)
Sàlt ànd Pepper to tàste
INSTRUCTIONS
In làrge pot, seàson chicken with cumin, oregàno, càyenne, sàlt ànd pepper
Seàr both sides over medium heàt until golden
àdd broth to pot, cover ànd cook chicken for 15-20 minutes or until fully cooked
While chicken is cooking, melt butter in medium skillet

Today's lunch was courtesy of Radosta's, 249 Aris Avenue, Metairie, LA 70005. They've been serving the New Orleans area since 1952. They are located in a cozy neighborhood with limited parking so choose your parking spot carefully.
As you walk through the door, you realize you're in a neighborhood deli/general store market/liquor store. Walk to the back of the shop and order at the counter. Drinks are in refrigerated coolers with soft drinks and a large selection of domestic and foreign beer. Iced tea is also available. You choose your drink and pay for everything as you leave.
The menu covers almost every po'boy combination you can imagine available in either 10" or 7" size. Selections include their specialty roast beef, along with ham, veal, pork chops, chicken meatball, Italian sausage, chicken or tuna salad, turkey, liver cheese (!), salami, olive loaf, soft shell crab, fried shrimp, catfish, oyster, fried shrimp parmesan, BLT, grilled cheese, club sandwich, and fried eggplant parmesan. See? Something for everyone!! Prices range from $5.95 for the smaller size to $14.95 for the larger option.
Muffalettas are offered in 1/2 size ($8.95) or whole ($18.00)
Daily specials include everything from red beans and rice, spaghetti and meatballs, hamburger steak, and fried catfish. There are burgers, onion rings, seafood platters, southwest egg rolls, and so much more.
Sweet Harold finally decided on the fried shrimp po'boy dressed which means you'll get lettuce and tomato added to the sandwich. Lightly breaded and not overly salted (yay!) this one was a winner.
I definitely knew I had to try their famous roast beef po'boy. The roast beef was tender and so was the bread. I don't like soggy bread, so I appreciated that there wasn't a lot of gravy to soggy down the bread.
The order of fries are HUGE, so I'd recommend sharing an order.
The owners are friendly and welcoming. The atmosphere is busy, noisy, and entertaining. I really wish I had the time and opportunity to eat my way through the extensive menu.
