When I have overripe bananas on hand I make banana bread ... this healthy recipe from Sandra Bekkari's book 'Fast Food'

is my favorite ... with peanut butter, hazelnuts and chocolate.

such a poetical title may be hard to stand and represent if you're kind of a humble throw-toghether-to-use-leftovers-up.

it could not that hardly fit the extremely elaborated creation of a famous chef, which would mean you're going to dig into a sugary, whipped cream based little calorie bomb - nothing against chefs and high-level cusine, absolutely. that's just not my kind of choice.

 

basically I'm against wasting food and deeply into healthy recipe developing using what even humans can have on hand in their pantry - therefore with a bunch of simple, fresh and genuine ingredients I ended up with three mini mousse-blancmange kind of dessert which don't involve any single drop of whipped cream of even any weird stuff to make them exrremely soft, airy and fresh.

 

simplicity is always a win. healty as well, in this case.

sometimes I like to treat myself and my little sister whipping us up a batch of pancakes - and this happens once a week, normally. mine it's a strong traditions-based family, actually.

and I keep breakfast as the most sacred and absolutely essential moment of my day, so a (healthy) daily treat is always needed.

A tropical green smoothie, a mixed berry smoothie, and a chocolate berry smoothie. All healthy, all with spinach, and all tasty!

Absolutely traditional Russian breakfast! Absolutely amazing taste! Cooking oladi will take no more than 10-15 minutes of your time but they worth every single minute! Nothing can be better on breakfast! Hot, just fried, soft inside and a bit crispy edge! It’s a best breakfast for you and your kids! Serve them with a sour cream, honey, jam or fresh berries and enjoy your breakfast! If you were in Russia and haven’t got a chance to taste Russian oladi – well, I consider you have never been in Russia at all.

as stereotyped as it may sound, pasta, or better spaghetti, is what immediately recalls the Italian boot for others.

we don't eat spaghetti every single day, all the year round obviously, but this is what the world commonly pairs with us. pasta is our staple.

 

for me myself though, pasta factories could actually find their turnover at a loss, but I also indulge once in a while into a comforting bowl of steamy, hot spaghetti al pomodoro, possibly with juicy, fresh tomatoes making up the sauce.

it's kind of having home in your plate - how many mommies out there used to make their kids this simple dish, therefore filling their plates with real ingredients and garnishing the whole thing with affectionate love?

since my mom used to, I find myself enjoying this genuine recipe especially when I need to cheer myself up or, as in this case, when I'm about to leave for another country and I want to keep trace and reassuring memory of home as much as possible.

It doesn't get any better than this! It's the best minestrone soup I've ever had.

 

1/2 onion, chopped

1 cup carrots, chopped

1 celery stalk, chopped

2 garlic cloves, minced

1 (28 oz) can diced tomatoes

1 (15 oz) can white beans, drained, rinsed (cannellini or navy)

3 cups fat free chicken broth (or vegetable broth for vegetarians)

1 oz chunk of good Parmesan cheese rind

1 fresh rosemary sprig

2 bay leaves

2 tbsp chopped fresh basil

1/4 cup chopped fresh Italian parsley leaves

salt and fresh pepper

1 medium zucchini, chopped

2 cups chopped fresh or frozen (defrosted) spinach

2 cups cooked small pasta like ditalini or elbows (al dente)

extra parmesan cheese to top

 

Rinse and drain beans. Puree beans with 1 cup of the broth in a blender.

 

In a crock pot, combine broth, tomatoes, pureed beans, carrots, celery, onion, garlic, herbs, Parmesan cheese rind, salt and pepper. Cover and cook on low for 6 to 8 hours.

 

Forty minutes before the soup is done cooking, add zucchini and spinach. Cover and cook 30 more minutes. Add cooked pasta, cook 10 minutes more. Remove bay leaves, rosemary sprig, parmesan rind and season to taste with salt and black pepper. Ladle soup into bowls and top with extra parmesan cheese.

how could I survive without this delicious and good-for-you treat so long? I mean, I've been missing the intense flavor of extremely ripe bananas, the crunchiness from the walnuts, the chewy dates bits scattered in a moist and good smelling dough. I've been missing a delicious way to get an awesome dose of nourishment for both my body and mind - because sweet reats are fuel for happines, aren't they?

so thank you guy from Zzumo health bar in Valencia for have encouraged me to try that slice alongside my juice. my taste buds are shaking overjoyed!

 

two funny facts about this recipe's developing.

fact one. that guy, as far as nice and garrulous he was, forced me to face the unpleasant detail that he didn't have any english. only spanish please, no entiendo nada guapa, lo siento.

now, I hadn't spoken any spanish for years. I could made it as long as I wanted to order my morning smoothie. but holding a conversation about the differences between Valencia and Milan, or telling him something about my almost finished vacation while eating my yummy banana bread slice was a million steps further. I did it. embarassing.

and I asked for the recipe before leaving. call me a masochist.

 

fact two. the other day I was dying under the desire of smashing my face into a slice of that goodness, but the bananas I had bought specifically for that aim seemed to not want to ripen despite they'd been wrapped in a paperbag for three days.. so I got the yellow rebels and placed in the oven for an hour, then I squeezed them out. overripe bananas. quick & easy - because sometimes even nature needs to get a leg up!
