The culinary landscape of Australia had changed so much in the past 2 decades with the influx of immigrants from Europe and then Asia and the rise of a greater awareness of what is locally available (Bushtucker). What used to be an Anglo scenery has been blown apart by Italian, Greek, Southeast Asian, Chinese and Japanese influences. There are new trends developing, Moroccan and Korean, for examples. In the more than 10 years that I have been to Oz, I could only applaud the diversity that the Aussies had adopted so quickly to flavour their palette!
