Poor Lulu. I locked her out of the kitchen while I fried up my meatballs tonight and she went berserk. There's nothing worse than a gigantic shrieking chihuahua on the wrong side of the fence.
Mom made meatballs tonight. The meat mixture contains garlic, finely chopped onions, green bell pepper, tomato, pepper & salt. The meatballs are pan-fried and then placed in another pan to simmer for about 20 minutes in a paprika-based broth. Served with rice and a tangy cabbage and radish salad.
That's something that we don't get to see everyday.

the recipe
my first attempt at homemade meatballs so I wanted to makem big. I looked around the internet and from my busy mind I came up with my recipe.
1 pound of ground chuck (perfect blend of lean and fat-taste)
1 pound of Carroll's Hot fresh sausage (not the links)
2 large eggs(I figured one egg per pound of meat was most plentiful)
1/3 cup Italian bread crumbs
1/3 cup grated Parmesan cheese
3-4 cloves minced garlic
blend all together well but do not overblend-placed covered in fridge for 1 hr and 24 hrs at the most. Placed these on parchment paper (I think this stuff really helps soak up the grease) cooked in preheated 350 F oven for 35 min. Then I placed in the preheated sauce and let simmer on low for an hour so all the stuffs could get married up. No salt or pepper or other seasonings were added cause I figured the Parmesan cheese was salty enough and Carroll's sausage had the perfect seasonings for everything in that meatball.

Romano (pecorino) cheese
Parsley
Basil
Onion powder
Garlic powder
Pork meatballs filled with a boiled quail egg and coated in sweet and sour sauce. Steamed broccoli, potato salad, oranges and pineapple and salmon stuffed onigiri. Big bento for a long day.
