Yesterday night with Krieng at Ratchada Night Market.
Recipe from The Food of China, by Deh-Ta Hsiung and Nina Simonds, with photos by Jason Lowe (the German version, China kulinarisch entdecken, published by Tandem Verlag)
Pork meatballs, with shiitake mushrooms, carrot, spring onions, ginger, soja sauce, rice wine and sesame oil, rolled in soaked sticky rice and steamed.
Monday's turkey meatballs were Tuesday's open faced meatball sammich on Panera's asiago cheese bread. Uh-may-zing.
This was... eatable... but definitely not our favorite. The base for the casserole was created by slices of Italian bread - man, did it get soggy! ;-( I would prefer the bread nice and crispy on the side.
I am including a photo here mostly for my memories - this is the first time our little one tasted a "grown-up" meal and then finished it. Although... I had to feed our picky eater. At first I thought she will be done right after the meatballs but to my surprise - she liked mostly the mushy bread!
I changed this recipe severely. I have to admit I wouldn't want to taste the full-fat version. Blaaah. :-)
- I made turkey meatballs;
- skipped the mayonnaise completely;
- used only half of the cream cheese amount, 4 oz, softened and mixed with just a tad of milk to make it more spreadable;
- used more Italian seasoning;
- used less mozzarella as well - maybe 1 1/4 cup? It loos really cheese anyway, right?
- I didn't see the reason to use so much water, so maybe 1/3 cup mixed into that spaghetti sauce (and baked uncovered...).

1/3 cup chopped green onions
1/4 cup seasoned bread crumbs
3 tablespoons grated Parmesan cheese
1 pound ground beef
1 loaf (1 pound) Italian bread, cut into 1-inch slices
1 package (8 ounces) cream cheese, softened
1/2 cup mayonnaise
1 teaspoon Italian seasoning
1/4 teaspoon pepper
2 cups (8 ounces) shredded part-skim mozzarella cheese
1 jar (28 ounces) spaghetti sauce
1 cup water
2 garlic cloves, minced
In a bowl, combine the onions, bread crumbs and Parmesan cheese. Crumble beef over mixture and mix well. Shape into 1-in. balls;
place on a greased rack in a shallow baking pan. Bake at 400° for 15-20 minutes or until no longer pink.
Meanwhile, arrange bread in a single layer in an ungreased 13-in. x 9-in. baking dish (all of the bread might not be used). Combine the cream cheese, mayonnaise, Italian seasoning and pepper; spread over the bread. Sprinkle with 1/2 cup mozzarella.
Combine the spaghetti sauce, water and garlic; add meatballs. Pour over cheese mixture; sprinkle with remaining mozzarella. Bake, uncovered, at 350° for 30 minutes or until heated through.
Nutrition Facts (before my changes): 1 serving equals 641 calories, 39 g fat (15 g saturated fat), 94 mg cholesterol, 1,234 mg sodium, 43 g carbohydrate, 3 g fiber, 29 g protein.

This is pretty much my first attempt at editing video - it is of making spaghetti and meatballs, condensed down to under 3 mins.
I probably could've edited it a bit more rhythmically if i had chosen the music before I started!
Speaking of which, the music is Giorgio Moroder, as it was the only vaguely Italian music I could think of in my record collection, to go with vaguely Italian food. The record is 'Paul's Theme (Jogging Chase)', which is on the other side of 'Cat People (Putting Out Fire)' by Bowie on 12".
I know it's not very exciting. You don't have to watch it!

No, none of these were made from scratch, the meatballs were PC brand frozen meatballs, powdered mashed potatoes and frozen veggies, but it was rather quick to prepare and still tasty!
A simple, weeknight spaghetti with meatballs. A little white trash garlic bread (split hot dog buns with garlic, butter, oregano, and olive oil, broiled).
He was very calm and enjoying the view out the window when suddenly he was alerted by something~~~I looked to see and it was the vultures flying in the sky.
Taught the kids how to make dough... explained how yeast farts are an essential ingredient to the mix.
