The cafeteria at Ikea was insane. There were two lines with 75 people in each one; you could get either Swedish Meatballs with gravy or kung pao chicken with rice. We opted for the Swedish selection.

Italian meatballs + onions that I cooked in bbq sauce and bunch of other stuff w/ oranges. I know my zest garnish is too thick. Lol.

Jim made super yummy meatballs for dinner tonight.

Venison & Chorizo meatballs (from the Stockbridge Market) in a spicy tomato sauce on a bed of tagliatelle.

 

Lightly browned the meatballs in a pan with some chilli & garlic infused oil, then added four chopped tomatoes, half a chopped onion, one chopped green chilli and fried either for a while until the tomatoes and onion were soft. I then stirred in some tomato puree with hot chilli powder and a pinch of ground cayenne pepper, a dried chipotle chilli some italian mixed herbs, a couple bay leaves and a large dash of liquid smoke. I then added a bottle of Whisky Oak Aged Ale and left to simmer. When the tagliatelle was cooked I drained it and added some garlic salt and pepper.

Huge meatballs, probably pork. We were never lacking for food. Cubans are good cooks.

Adlai decided to change his independent project (3rd grade) to the Ape Caves so we made an early morning trip there on Mother's Day. It was rather fun to be the only people in the lava tube. We hiked the easy way (down the tube for 3/4 mile) and took various photographs along the way (painting with light).

 

This hanging structure is known as the "meatball." It is a large chunk of lava that was hung as a lower tube partially formed. The bottom of the meatball is approximately 9 feet above the cave floor.

Friday was a big meat day for me. I made a batch of meatballs and prepared meat sauce for lasagna.

 

This is the first time I have made meatballs, and these turned out quite delicious. I used a recipe from Martha as a basic guide but instead of just chuck and beef used the same combination of meats (pork, veal, beef) that I used in the lasagna ragu. They didn't stay as round as I would like during the browning, but I later read a tip that slightly freezing the meatballs pre-browning really helps. I will definitely try that next time.

This place had the fastest line because all they had to do was spoon meatballs into a cup and grate some cheese over it. Meatballs were really good. Almost went back for seconds.

Homemade Ikea-ish Swedish meatballs, potatoes, and gravy. Recipe here

Ingredients

- 1 loaf french bread, cut into 1 in thick slices

- 8 oz package cream cheese, softened

- 1/2 c. mayonnaise

- 1 tsp Italian seasoning

- 1/4 tsp pepper

- 2 c. shredded mozzarella cheese

- 1 lb package fully cooked frozen meatballs, thawed

- 28 oz jar pasta sauce

 

Directions

1. Preheat oven to 350 degrees.

 

2. Arrange bread slices in a single layer in a 9×13 baking dish. Fill in gaps with smaller chunks of bread.

 

3. In a bowl, combine cream cheese, mayonnaise and seasonings, then spread mixture over bread slices.

 

4. Pour pasta sauce on top of mixture and add meatballs.

 

5. Sprinkle with cheese.

 

6. Bake uncovered for 30-35 minutes.

He was a purebred Beagle. The name on his papers was "Billy the Kid III", but he was always called Meatball. We got him from an acquaintance of my dad's when he was about 2 years old. He was a good dog, but he liked to get out of the yard all the time.
