Meatball is in the background. This might be the only picture we had of her. I'll have to check with my sisters to see if there are any others floating around. This was taken in our back yard in La Grange.

We got Suzie from a coworker of my dad's. This person was getting divorced & was moving into an apartment that didn't allow dogs & had to find another home for Suzie. She was 4 years old when we got her. I thought she was much older because she just didn't look well & was obese. The vet said he thought she had survived distemper as a puppy which caused her to have some problems as an adult. I like to think she was happy with us. We had to put her to sleep because she developed diabetes. At that time, there wasn't much they could do for dogs with diabetes. I'm glad things are different now.

Meatball Spaghetti

Tonites dinner was meatball sandwiches. I made them with a nice

marinara sauce & then I smothered them in melted mozzarella.

Josh made these amazing meatball subs.

Meatball subs I made up for lunch this afternoon. My wife made the meatballs and I toasted the subs.

Teriyaki Meatballs with fried Qunoa

For the meatballs....

5 pounds ground beef

2 tbl. Italian seasoning blend

1 1/2 cups grated parmesan

1 1/2 cups bread crumbs, fine

1 teaspoon sea salt

1 teaspoon black pepper

4 eggs, beaten

Mix it all together and form into meatballs. I wanted a large ball, so I made 4 ounce meatballs.

Bake at 325F until the internal temperature of the meatball is 160F.

Toast slider buns, with provolone on both the top and bottom halves. Place the meatball on the bottom bun, add a marinara or spaghetti sauce and place the "lid" or top half on top.

You could also use a mixture of ground meats for the meatballs. Pork and/or veal would be good additions.
