Took Meatball to the vet a few weeks back. He weighs 19 glorious pounds. We have to lose some weight though.
This egg on meatballs has the perfect combination of fat, protein and carbs. It is an excellent meal for marathon training and recovery. Not to mention, it tastes great. This can only be found in my house. Bon Appetit!

VV also wanted to try the spaghetti and meatballs, so I ordered it since I didn't have much of a preference.

Made these on Sunday along with the miniature soft pretzels and the key lime coconut cake. I think these were my favorite. Recipe is Meatball Sliders from Smitten Kitchen. Mine kept falling over, so the picture isn't great, but everyone LOVED these. And if you make them, make sure to make the rolls. It's amazing how well the meatball, sauce, and roll works together...it probably wouldn't have been as good without all three. Definitely worth the effort!

For the meatballs....
5 pounds ground beef
2 tbl. Italian seasoning blend
1 1/2 cups grated parmesan
1 1/2 cups bread crumbs, fine
1 teaspoon sea salt
1 teaspoon black pepper
4 eggs, beaten
Mix it all together and form into meatballs. I wanted a large ball, so I made 4 ounce meatballs.
Bake at 325F until the internal temperature of the meatball is 160F.
Toast slider buns, with provolone on both the top and bottom halves. Place the meatball on the bottom bun, add a marinara or spaghetti sauce and place the "lid" or top half on top.
You could also use a mixture of ground meats for the meatballs. Pork and/or veal would be good additions.
