Meatballs in a tomato sauce. This one worked well, with the meatballs only a little dry. You couldn't notice much with all the tomato sauce.
Polpette e sugo, is usually served as the first plate, after the antipasti. This sailor sauce, (marinara sauce,) is recent - after introduction of the red fruits from America.
I make a bunch of these and save them for sandwiches, as a side dish, by themselves, on polenta or, with pasta, (more about that later.)
The leftover meatballs and sauce were eaten the next day, first heated up in the oven, topped with parmesan, and grilled till golden on top.

Vegan "meatballs" with sweet tomato basil sauce and white rice! This was kind of an experiment just to see if I could make 'meatballs' without using vital wheat gluten and without cooking them in the red sauce but on the skillet so they get kind of chrispy on the outside, and it actually turned out pretty good (suprisingly) even though they were still a little bit mushy on the inside, because it's still soy and no eggs so you can't really expect it to firm up, ya know? But overall it was really good, extra flavorful and extra yummy! But vital wheat gluten is still the way to go if you are not planning on cooking them in sauce, obviously!

Veal meatballs, Jim Lahey's recipe. Good, but not mindblowing, and a bit more work than I care to put in. B
Yuca or cassava is not my favorite food, but I can eat it. I prefer potatoes for my starch. The meatballs were up to my supermarket's high standards, excellent. I should also add that the sauce was terrific! It's too bad there wasn't pasta instead of yuca.

Making meatballs at church yesterday for this coming Saturday's Spaghetti Dinner Fundraiser for the kids.
May 3rd. First time making proper spaghetti & meatballs. It took a little bit of time but the end result was pretty tasty.
Director of Interactive Theresa Riley made tender meatballs with mushroom gravy, following the recipe from participating blogger, Last Night's Dinner. Theresa heroically brought the dish to the office in a crock pot! We gobbled up these meatballs in no time at all.
