jumm ! Made this last week. Fresh pasta with tomato sauce and special meatballs (with dried tomatoes and garlic).

Spaghetti.. that is sweet and creamy. Sauce... that just has the right amount of gooey sweetness. Meatballs... that are crunchy and yummy. Not traditional savory spaghetti but sure a wonderful sweet treat look alike!

Had fun making this sweet treat and the picture makes the spaghetti look more white but I did tint the icing to more of a yellow tone but not really looking that way. You could make your pasta look darker by adding food coloring, even make it look like whole wheat pasta!

Turkey meatballs in a mildly spicy tomato sauce with Rotini pasta. The best part, One Serving: 350 cals.

Meatball enjoys the cooler days we've been having lately.

I got a pound of ground beef and half a pound of ground pork from my CSA share last Wednesday. It was unplanned since I would rather get more vegetable. But of course, when life gives me ground meat, I make meatballs. When it comes to all things comfort food, I can't think of a better source than Pioneer Woman.

 

I sent little brother to buy some fresh pasta from St Lawrence Market on Saturday and he came back with these lovely pale green basil spaghetti. I love the taste of fresh pasta. There's just something about it that dry pasta cannot measure up. I made the recipe as written except for one small change. I was running late and the sauce could use more slow simmering to further thicken up. I cheated by adding a healthy splash of cream and it turned into the perfect consistency very quickly. I think it's a cheat that Ree would approve. :)

 

About those meatballs...so tender! I absolutely love them (and so did B). The breadcrumbs were made from stale baguette that I stashed away in the freezer. Ree was right about the juice of the meatballs flavouring the homemade tomato sauce. My recipe turned out 30 meatballs and plenty of sauce. I think dinner for this week is all set.

I had leftover sauce from the spaghetti and meatballs that I made. I used it to make a sandwich. I used red wine in the meatballs.

This was made with a french bread I made a few days ago. My wife and I made the meatballs and topped the loaf with them. Then melted the cheese in the oven and crisping the bread slightly making for a delicious meatball sandwich.

After I roasted the 16 meatballs in the previous photo, I tried to can them. Hoever, I didn't make enough marinara and so could only do three jars' worth. (Four meatballs per jar.)

 

I was surprised to see that 1/2 cup of the Marinara sauce had siphoned out of each jar! This is the first time this has happened to me. This is also the first time I've attempted to "hot pack" anything, so that I could fill the jars to one inch headspace. However, I had allowed the meatballs to cool, and that may be the reason (in part) that the jars had siphoned: The meatballs had re-expanded during processing and began pushing the sauce out of the jar.

 

Will attempt this again soon, as I want to perfect this technique. Four meatballs with two cups of sauce is perfect (IMO) for one pound of pasta. And the meatballs turned out tender, juicy and delicious.

Dan, Joleen and I eating meatballs at IKEA in Chicago for lunch... quite tasty (as per usual, one of the things we do when we hit IKEA).
