I must confessed I wasn't expecting so much external influences on local cuisine but for a group of islands, first discovered by the Spanish, later subjected to consecutive German, Japanese and American colonial control and sustaining a huge Filipino and Taiwanese presence, the cuisine on offer is quite cosmopolitan.

The locals are quite fiercely protective of their own food; it was almost impossible to find certain dishes. It will take outsiders some time I reckon, to dig up the real Palauan culinary nuggets.
