Palauan Style Chicken
Having lunch @ "The Coconut Terrace" of the Palau Pacific Resort, before hitting the beach.
Grilled chicken stuffed with ham and topped with pineapple and cheese served with curry sauce.
Quite honestly, I am not too convinced this is traditional Palauan food. Cheese? Ham? Curry?
More like a mishmash of external influences on Palauan food. Cheese and Ham are standard American fare and Palau was under American protectorate for a long time. Curry....well, I am at a loss to explain that - unless it's a Japanese influence, since Japan was Palau's colonial master for quite some time as well. As for pineapple....I'm a total loss to explain its presence.
Baking chicken on the other hand, seems to be prevalent in the Pacific. Rice is also a later introduction that Pacific islanders seem to embrace.
I wasn't bowed over by the dish. The chicken breast used was as dry as the sun-parched sand just beyond my view. There wasn't enough curry gravy to drench the dry meat with. The saving grace was the Mozzarella cheese with the pineapples but cheese glazed pineapples just could not salvage this (over baked) baked chicken.
