Ukaeb (Land Crab Meat Baked With Coconut Milk)

One can actually try three different types of crabs in Palau. The expensive and hard-to-taste-elsewhere coconut crabs, the huge and fleshy mangrove crabs and these small, almost purse-like land crabs.
Basically, the flesh of the crabs have been extracted and then baked with coconut milk/cream, before serving the thick coconutty crab paste with their shells.
Crab and coconut is always a good pairing - the paste is sweet, seafoody with a crab-fishy sort of aroma, nicely smoothened out by a tidal wave of coconutty creaminess. It is almost like eating a crab pudding. I love it!
