With a quick simmer in ginger-teriyaki sauce, these bite-sized meatballs make a simple week night dinner feel like a party. Serve over Jasmine rice (provided) or with toothpicks for a quick and easy appetizer.
I have been craving meatballs lately - so tonight we made some and they were quite tasty. later this week I am going to make the western NY dish "beans and greens" with kale from the garden, and at some point try my hand at making tamales.
Meatball is another one of my favorites. he is insulin dependent and they have a very hard time trying to control his runaway glucose numbers.
Jelle made some Kötbullar with potatoes and cucumber salad. It was so delicious, I love when he makes that! Yummy!
make mini chicken meatballs
sear in a pan with a little olive oil
plop them into a sauce, simmer
boil spaghetti and serve with parmesan

1 large can tomato soup
2 cans pineapple (slightly drained)
1 can unsweetend applesauce
2 tbs sugar
about 2-3 cups frozen meatballs
put in crock pot, cook 4 hrs. Yum!
Gyros normally have meat that comes from a spit, but that's not very practical. The Cook's Illustrated folk tried out a few variations for making the gyro meat at home, and ended up with an approach that basically fried small meat patties to make a crisp/cruncy exterior with a softer interior.
