Servings: 16 meatballs
Ingredients
3/4 cup Whole Wheat Panko breadcrumbs or lightly crushed Wasa Light Rye Crispbread
1/3 cup FF milk
1 lb. extra-lean ground chicken
3 large egg whites
1/4 cup chopped fresh parsley leaves
1 T plus 1 tsp. grated RF Parmesan cheese
2 tsp. garlic powder
2 tsp. onion powder
1/2 tsp. salt
Instructions
Preheat the oven to 400F. Lightly mist a medium baking sheet with olive oil spray. Set aside.
In a mixing bowl, combine the bread crumbs or crushed crispbread and the milk. Let stand for 2 to 3 minutes, or until the milk softens the crumbs. Add the chicken, egg whites, parsley, cheese, garlic powder, onion powder & salt. With clean hands or a fork, mix well. Divide the mixture into 16 equal pieces. Roll each piece between your palms to shape into a ball. Place the meatballs, not touching, on the prepared baking sheet.
Bake for 12-15 minutes, or until no longer pink inside.

... a home run hit in this ball park! Great for school and work lunchboxes. I just made a double batch and put one in the freezer for quickie suppers with a salad. :-) Delish and so easy it feels almost wrong. ;-)

Used grassfed beef for these. It costs 8$ per pound, but I only buy about 3/4 of a pound, which fed everyone and had leftovers. I made small ones with no spices for the kiddos and big ones with italian spices for me and wifey. If you're making meat, don't be afraid to touch it - why would you be? You're going to wind up eating it.

Marinated meatballs covered with simple spaghetti sauce. Delicious yet an appetizing meal. Unfortunately, it is chicken meatballs.
This was one of the single most fantastic dishes I've eaten since culinary school started. The meatballs were seasoned and cooked perfectly, tender yet still bound together. The marinara was sweet, tangy, very tomato-y, with a slow heat. The herb-butter-brushed toasted hoagie bread soaked up as much of the excess delicious sauce as I could possibly ask for and still maintain structural integtrity, and the mozzarella broiled over top of everything added a richness that complemented the meat and cut a bit of the sauce's acidity perfectly. I'll never buy pre-made marinara again.
What are the best foods for runners? I've been looking for simple, whole and nutritional meals that will give me the fuel I need for marathon training. This fat and protein loaded meatballs are great for post workout recovery. The combination of the chipotle sauce and the Parmigiano Reggiano cheese makes it delicious.
