This dish is a distinct departure from your Italian Grandma's meatball. We combine thinly sliced chilis and lime into a juicy pork meatball. Best departure, it's served on a cucumber to balance the texture.

Menu: Pasta with tomato/cheese sauce and meatballs. Mediterranean salad ( beans, tomato, corn) , cornbread and a yogurt with blueberries at the bottom and cinnamon on the top. 100 % organic and home made.
We prefer the texture of pan fried meatballs. Once browned they head into the sauce for final cooking.
Ingredients:
500g minced beef
3 cloves of garlic, fined chopped
tomato chunks
2 tbsp ginger powder
1 egg yellow
finely chopped parsley
1 finely chopped onion
To make the meatballs:
1. mix ginger, parsley, garlic, egg yellow into the minced beef, shape with hands
2. heat the pan with some olive oil, fry the onion until slightly browned, add tomato chunks on medium heat until it starts to cook
3. shape the meatball with your hands, fry in a separate pan until until browned and cooked through
4. serve with tomato sauce and grated parmasan
2lbs 80/20 ground beef
1/2 unseasoned bread crumbs
1 tablespoon Italian seasoning
1/4 cup milk
1 egg
salt & pepper
Preheat oven to 350 degrees. Line a cookie sheet with aluminum foil.
In a large bowl add ground beef and the other ingredients. Mix with your hands blended well. Shape hamburger into balls. This recipe will make about 22 golf ball sized meatballs. Place meatballs on aluminum lined cookie sheet at least 1/2 inch apart. Bake in a preheated oven for about 30- 40 minutes.
This time we have overstuffed our signature French bread with layers of seasoned marinara meatballs and a mound of mozzarella cheese. Bake this up for an indulgent treat and enjoy each delectable, messy, cheesy, saucy, meaty, yummy bite.

The result was so very delicious. Next time I'll have to remember to pack them a little more tightly, however.
