Hello Sherrie,
On a happy note, Meatball continues to do well. In February, I thought that his stomatitis was acting up because he wasn't eating so well. It turns out that he was merely "on strike" from his diet cat food. He is now eating Royal Canin Special which is crazy high in calories but tastes wonderfully good to him. I guess he's just destined to be a Meatball. Thanks to his inspiration and his love of the calm of the basement, we are adding a full bathroom in the basement. Meatball's kitten friend was diagnosed with a congenital heart defect. Now that he takes daily Lasix doses, he has become a very active kitten. But, his craziness can be too much for Meaty. No sadness though, Meatball's new best friend is our blind cat Simba (i.e. Peanut from HOKAFI).
On a sad note, you have probably heard the news about Teddy's passing on Jan 16, 2012. His blood work identified a high calcium number that likely was an indicator of a cancer. He was always such a lover and a fighter, but this time his eyes told me it was time. Dr. Barnard, Teddy's vet for 3 years, cared for him with respect and compassion.
What do you think of Zara the black cat with white paws that lives in Toby Towne? We have visited her for several weeks and she has always been so sweet. In all our visits, we actually never noticed her before because she peacefully blends into the background. But if you pick her up, she will sit on your lap as long as you will let her. We will look forward to your opinion.

FYI: I gave her my opinion about Zara (a sweet girl) but I also touted Nike.
I complained about a Subway meatball sandwich this week and so my wife is making me a much better one.
this is now my famous meatball recipe that my friends and family just love!
rosemary
oregeno
basil
parsley
lavender
brown sugar
balsalmic vinegar
tiger sauce
worcestershire
bread crumbs
parmesan
ground beef
crushed red pepper
onion
garlic
red bell pepper
Bake at 400F until cooked through and start to crisp up.
Add to your favorite pasta sauce and let the flavors combine and simmer for at least 1 hour .
Serve with noodles and ENJOY!

Ingredients
3/4 cup Whole Wheat Panko breadcrumbs or lightly crushed Wasa Light Rye Crispbread
1/3 cup FF milk
1 lb. extra-lean ground chicken
3 large egg whites
1/4 cup chopped fresh parsley leaves
1 T plus 1 tsp. grated RF Parmesan cheese
2 tsp. garlic powder
2 tsp. onion powder
1/2 tsp. salt
Instructions
Preheat the oven to 400F. Lightly mist a medium baking sheet with olive oil spray. Set aside.
In a mixing bowl, combine the bread crumbs or crushed crispbread and the milk. Let stand for 2 to 3 minutes, or until the milk softens the crumbs. Add the chicken, egg whites, parsley, cheese, garlic powder, onion powder & salt. With clean hands or a fork, mix well. Divide the mixture into 16 equal pieces. Roll each piece between your palms to shape into a ball. Place the meatballs, not touching, on the prepared baking sheet.
Bake for 12-15 minutes, or until no longer pink inside.

... a home run hit in this ball park! Great for school and work lunchboxes. I just made a double batch and put one in the freezer for quickie suppers with a salad. :-) Delish and so easy it feels almost wrong. ;-)

Used grassfed beef for these. It costs 8$ per pound, but I only buy about 3/4 of a pound, which fed everyone and had leftovers. I made small ones with no spices for the kiddos and big ones with italian spices for me and wifey. If you're making meat, don't be afraid to touch it - why would you be? You're going to wind up eating it.
