The barrels that receive the sap coming down from the tapped trees. It's hard to see in this photo but there are blue hoses snaking through the woods from tree to tree, leading down to these barrels.
I'm noticing LisaNH, one of my contacts, has further shots in her photostream showing the same.
These buckets collect the sap through tubes drilled into the maple trees. They were empty when this photo was taken. The temperature has to have been below minus five degrees and then rise to plus five before the sap flows. Temperatures were still in minus figures. Forty gallons of sap are needed to make one gallon of syrup.
So carrot cake doesn't really desperately need syrup - but most "normal" cake recipes would dry out and get super nasty if they were in the fridge for three or four days before a wedding. So the idea is to add moisture (and sometimes flavor) to the cake before it's frosted and stuck in the fridge.
I used an eighth of the quantity of syrup recommended by the book we were using, but the carrot cake wasn't one of the book recipes, so it turned out fine, in the "It was phenomenal and every last piece of cake got eaten" kind of way.
