rhubarb syrup is easy and delicious. the season for rhubarb is pretty much over - it's more of a mid-late spring vegetable. it's tart and stringy, making it excellent for pies. but i saw a bunch at the market this weekend and thought i might as well make syrup with it.
1. cut stalks into chunks
2. simmer the stalks in simple syrup* (equal parts water and sugar) for about 20 minutes, til the fibers start to fall apart.
3. strain mixture through a fine sieve, separating the solids from the liquids.
4. store syrup in an airtight container in the fridge
*use ratio of 2:1 rhubarb to simple syrup - more or less depending on how sweet you like things

Delicious cupcakes based on the most scrumptious Camp Maple Syrup. These cupcakes despite the 2 cups of maple syrup in the recipe are not overly sweet and are perfect with a cup of coffee or a strong tea.
Quite a dense cupcake, topped with cooked maple marshmallow frosting, sprinkled with brown sugar.

I wanted to use some maple syrup and I wanted to make some cookies, so...! I used this recipe allrecipes.com/Recipe/Chewy-Maple-Cookies/Detail.aspx adding a bit more flour.
I realized that my baking sheets, while helping to prevent burning, actually undercook a bit (they're the thick kind with a layer of air or such in between) and make my cookies a little flat. I'm going to try using the plain old baking pan next time, or leave the cookies in for around 4-5 minutes longer. That, and about 1/4th of a cup more of flour may be necessary anyway.
I needed to buy a new sack of brown sugar for this endeavour. I love packing brown sugar into a measuring cup and seeing it slide out all nicely. Surely you understand!
