I didn't cook dinner tonight. The husband did. I always tease him a little because the first time he made me dinner (over three decades ago), he made each thing one at a time, so by the time he got done, the first part was cold. When we started having kids, I was a stay home mom, so I did all the cooking. When he became disabled, he started doing a little cooking- like we'd get the frozen meat thing (like turkey in gravy or whatever) and he would make the side dishes. He's not doing massive meals, but he makes damn good normal meals.
So here's the meal I ate today. And that's what we're sharing in We're Here! today.
(fun fact- I hate vegetables. I only eat them because I'm an adult and I have to. Bleh).
At family dinners, I am usually assigned the task of potato masher. I guess you could say I’m the Mash Maker.

Our favourite place to eat in Bishops Stortford is Archers Tea Room .
On Thursday evening 27th-February-2025 , they held a “Bistro Night” . My choice from the special menu was a Lamb Leg Steak , cooked to my choice well done . Served with Mashed Potatoes ( with added Cream ) , Kale and Cauliflower . Gravy was added after the shot was taken.

Another bento composed solely of instant food — chicken popcorn, frozen mixed veggies and instant mashed potatoes. Despite the just fry / just reheat nature of the food, when prepared correctly and paired with complementary food, it still makes for a delicious lunch.

Main Course - the lamb was excellent. I got it with a peppercorn gravy (not pictured) that was so very good. I think whoever was plating tonight needs some more food-stylist advice.
360° is the name of the revolving restaurant at the top of the Crowne Plaza Trinidad. I have always.always.wanted to go to this restaurant. Whenever I passed it as a child (en route to the YMCA for swimming!) I would gaze up at this round structure atop the then Holiday Inn, and dream about what it must be like to sit in a restaurant, surrounded by glass, overlooking the city of Port of Spain and the Gulf of Paria, and of course, moving round and round. Like an amusement park ride, where they serve food. Well, I finally made it. And invited the parents and Lilandra.
Cafe Bernardo (Midtown) Grilled Salmon with fresh vegetables. the veggies were delicious, the salmon tasted just ok.
We took a trip up to San Francisco to have lunch at Japantown and then go to the Palace of Legion of Honor. So for today's lunch, I had okonomiyaki and korokke. These are so good and pretty simple to make if you have leftover mashed potatoes. And they are so yummy.

Ikea's Swedish Meatballs. Was found to have horse meat in them last year so they removed it from the shelves but they're back in glory with a tag of 50% beef 50% pork ingredients. But somehow it doesn't taste the same. No worries, I'm still addicted...
Chef Jason made an amazing steak with mashed potatoes, baby corn, mushrooms, and an onion ring (the kids got mac and cheese featuring crushed goldfish crackers)

An old photo taken in September of last year with my HP Photosmart 945. This was for a package design.
This took the good part of a day to do. If I recall correctly, it took me about 2 hours for prep, another hour for setup, about 30-45 mins of shooting, and a couple of hours to "clean" it up in Photoshop. I'm no food stylist, but I think I did pretty well.
My vegan Thanksgiving/Thanksliving pizza, with garlic and chive mashed potatoes, gravy, hickory smoked Tofurky deli slices, carrots, sweet corn, and green beans, all on a veggie broth-infused crust. Served with sides of stuffing, mashed potatoes (leftovers from the pizza!), mixed veggies (also leftovers), cranberry sauce - and more gravy, of course!

Awesome Slow Cooker Pot Roast
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (1 ounce) package dry onion soup mix
3/4 cup water
5 1/2 pounds bottom round roast
In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.
Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.
