Chicken wings baked in a homemade peach barbecue sauce. Sides of sauteed asparagus and mashed red potatoes with asiago cheese.
In 1988 Oklahoma designated an official state meal. And, it includes: cornbread, sausage and gravy, chicken fried steak, pecan pie, barbecue pork, fried okra and squash, biscuits, grits, corn, strawberries and black-eyed peas.
This is my rendition of the chicken fried steak. It includes some of grandma's secrets: adds some cornstarch to the seasoned flour, use buttermilk with egg for dipping, pound it "too thin" and fry it quick and hot while swimming in lard.
Gravy is made from the lard and pan drippings, flour, plus some butter, salt and pepper, and evaporated milk with a splash of Worcestershire sauce. Lumps in the potatoes are just fine but, not in the gravy [[;-)

Crispy fried chicken and buttermilk biscuits by Dietsch; creamy mashed potatoes and pan gravy by me. There is nothing green on this plate; this was intentional.
We went out to lunch with some for work colleagues of mine whom now live in France .
On the “specials board” at the restaurant of our choice was , Liver , Bacon , Peas and Mashed Potatoes served with a thick onion gravy .
Now as my partner does not like Liver , I very rarely cook it at home !

Slow Cooker Garlic Chicken, Roasted Brussels Sprouts, Parmesan & Roasted Garlic Mashed Potatoes
Slow Cooked Garlic Chicken
I should note I found that recipe here.
4 skinned chicken breast halves
1 t. salt
2 t. paprika
2 t. lemon pepper
1 large onion, sliced
10 cloves garlic (1 medium), un-peeled
Mix together salt, pepper, and paprika. Rub all over meat side of chicken breast. Place onion in slow cooker. Place chicken breast, meat side up, on onion. Place garlic on chicken. Cover and cook on low in slow cooker for about 5 hours or until juices run clear.
(Again - never the one to follow a recipe to a point - I used some leftover thighs and drumsticks instead of breasts. Also once it was done, I took the garlic out of the little sheels and ran it through a press and put it in the pot - I think you could use more garlic if you like. Also - I think you could up the lemon pepper by about 1/4t.)
Roasted Brussels Sprouts
Cut knobby bit off end, cut in half lengthwise. Peel off outer leaves until you get to the good parts (ha ha! I'm so technical) place on a baking sheet. Coat with olive oil, salt and pepper. Toss. Place in oven on 450 degrees. Remember to shake the baking sheet every 5 or so minutes. Keep an eye on them, they have high sugar content - they will take anywhere from 15 to 25 minutes depending on how big they are.
Roasted Garlic Parmesan Mashed Potatoes
To roast garlic. Take an entire head of garlic, wrap in foil with 2 t. water and 1 t. olive oil. Place in 450 oven for an hour. Garlic will turn golden brown. Let it cool and you can squeeze the garlic right out. If it's slightly firm still (like mine was last night because I couldn't wait for it to finish all the way) just run it through a garlic press.
Potatoes: Clean and peel in necessary spots. Chop them up and place in a pot of salted water over high heat. When they break apart fairly easily with a fork, drain them and put them back in the warm pot to dry out. I think I used about 4 medium-sized potatoes. To that I added about 1/4c. whole milk, 2T butter (REAL BUTTER KIDS), 3T grated parmesan cheese, 1 1/2 T. roasted garlic. Mash, add more milk if you like your potatoes less thick.
