I took this while at our Molecular Cooking class at Sur La Table in Los Angeles. There's this big mirror above the chef's station, which is angled so you can see everything he's doing - even if you're sitting across the room. I liked this angle, so I snapped it. It was the only picture I took the entire day. I was too excited to learn molecular cooking tricks, and meet Peter, Jo, and Cody for the first time.

The Little Chef at Penrith in 2015.
The Little Chef first opened in 1987/88 and was housed inside of a large rectangular building perched on top of a small hill. The A66 is a major route which runs from Scotch Corner to Cockermouth. It feeds many towns and intersects with many routes to the North. Thus, a Little Chef here would be sure to attract a lot of passing traffic on the road. Little Chef's owners at the time, Forte, thought so too and in order to maximise the restaurant's potential chose a location close to the large town of Penrith to help encourage locals. The site chosen also had a Travelodge which presented a great opportunity for Little Chef to attract additional custom from the hotel, especially when it came to the breakfast rush. In the Granada era, the Little Chef saw the addition of a Burger King outlet. However, this later closed.
Unlike other Little Chefs, the Penrith branch used to have a sign in the car park which told travellers what the restaurant has to offer. The sign used to read:
- Licensed Restaurant and Bar
- Coffee and Snack Bar
- Take Away
- Open 7am - 10pm
However this information has since been replaced on the sign by a Burger King logo.
The Little Chef recieved the "New Choices" Makeover in 2002 giving it some smart new furniture and access to exciting menus from Harry Ramsdens, Upper Crust, Wiseguys Pizza and Caffe Ritazza. A nice feature of the interior is the low lighting as it brings a nice atmosphere to the restaurant, especially in the evening. The low lighting should help attract evening diners.
Happily, the Little Chef is still operating today. Current owners Kout Food Group reopened the Burger King in 2013 in a bid to attract extra custom

Executive Chef and co-owner Dan Barber, who opened the original Blue Hill restaurant in Greenwich Village in 2000, received the James Beard Award for Best Chef: New York City in 2006 and the James Beard Award for the country’s Outstanding Chef in 2009. He was named one of the Best New Chefs by Food and Wine Magazine in 2002, and was named one of he world’s most influential people in Time Magazine's annual Time 100 in 2009. He wrote a book, The Third Plate: Field Notes on the Future of Food in 2014 and was appointed by Barack Obama to serve on the President’s Council on Physical Fitness, Sports, and Nutrition.
Blue Hill at Stone Barns was opened by Dan Barber in the spring of 2004 within the Stone Barns Center for Food and Agriculture, a non-profit farm and educational center located on 80 acres of former Rockefeller estate in Pocantico Hills. The center was created by David Rockefeller, his daughter Peggy Dulany, and their associate James Ford as a memorial for Peggy Rockefeller, who died in 1996. The farm-to-table destination, housed inside a former dairy barn, emphasizes seasonal and locally sourced ingredients including many from the surrounding fields and pasture.
Blue Hill at Stone Barns won the James Beard Award for Outstanding Restaurant in 2015 and the James Beard Award for Outstanding Service in 2017. It was named the restaurant of the year by Eater in 2016 and reached Number 11 on the World’s 50 Best Restaurants List in 2017.
