Pretzel in caramelized sugar with nuts
Caramelization (British English: also caramelisation) is the browning of sugar, a process used extensively in cooking for the resulting nutty flavor and brown color. As the process occurs, volatile chemicals are released, producing the characteristic caramel flavor.
Like the Maillard reaction, caramelization is a type of non-enzymatic browning. However, unlike the Maillard reaction, caramelization is pyrolysis, as opposed to reaction with amino acids.
When caramelization involves the disaccharide sucrose, it is broken down into the monosaccharides fructose and glucose.

There are more squirrels out there now than you can shake a sack of nuts at. They are busy packing on those few extra ounces for and building up there cache for the coming winter.
The squirrels on Brandon Hill are so tame that with a bit of patience and a handful of monkey nuts you can get them to within a few inches of your camera. Useful if you are trying to catch them with a fish-eye lens.
Edit: This has gone a bit ballistic now, so thank you to everybody for their kind comments and faves. As several people have asked, I placed the nuts on the ground. I set up with my 5D2 and fisheye just a few inches away, lying flat out on the ground and grabbed shots as the squirrels came up close. Simples :^)
