What You Need
2 lb. ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/4 cups water
2 eggs
Make It
HEAT oven to 400ºF.
LINE 2 (15x10x1-inch) pans with foil; spray with cooking spray. Mix ingredients until blended; shape into 32 (1-1/2-inch) balls, using 1/4 cup for each.
PLACE 16 meatballs in each prepared pan. Bake 16 to 18 min. or until done (160ºF).
COMBINE half the meatballs with Tomato-Basil Cream Sauce or Creamy Brown Gravy. (See Tips.) Cool remaining meatballs; freeze for later use.
Martin is made up of meatballs and is one happy go lucky skateboarding dude. He wears a cape, which is often covered in tomato sauce.
Martin’s special move is the meatballdozer where he rams the shins of his unlucky victims. Not only does this cause excruciating pain, he also covers people’s legs in sauce, which is a nightmare to remove!
This picture doesn't do this dish justice. These meatballs are so tender and delicious and easy! I adapted this recipe from many meatball recipes I've tried over the years so here it is.
Oven-Baked Meatballs
1 lb lean ground beef
1 lb lean ground pork
2 eggs
1/2 cup Italian bread crumbs
1/2 cup grated Parmesan cheese
1 onion, finely chopped
1 garlic clove, minced
Salt and Pepper to taste
Mix all ingredients together well and form into 1 to 1 1/2 inch meatballs.
For the Sauce:
1 28-oz can of crushed tomatoes (I used Roma tomatoes)
1 10-oz can cream of tomato soup
1 onion, chopped
1 tbsp sugar
Salt and Pepper to taste
Mix all ingredients together in an oven safe dish, preferably with a lid. Add meatballs, and bake at 350F for 2 hours. After 2 hours reduce oven temperature to 300F and bake for another hour.
Once the meatballs are done, take them out of the oven and let the whole thing rest while you slice an onion, a red or yellow bell pepper and a package of button or cremini mushrooms. Sauté the vegetables in a little olive oil until they're tender. Serve alongside the meatballs on pasta of your choice, I usually serve these with fettuccine.

I made these meatballs for dinner tonight while watching the presidential debate. I first saw the recipe on "Tyler's Ultimate" of foodtv years ago and ha've recently been craving them. On the show, Tyler traveled to visit a baroness where she demonstrated these amazing-looking meatballs filled w/ fresh buffalo mozzarella cheese from her buffalo ranch.
The best part is when you bite into them and this delicious gooey softness spills into your mouth. Mmm! Topped with fresh basil, they're absolute heavenly. =)

-used ground turkey instead of the suggested meats
-1 egg to 1.25 lbs. ground turkey
-whole wheat instead of white bread
-1/4 cup of milk was just enough to soak the bread
-2 shallots instead of onion

My idea when using this kit was to do recipe challenges on all the boards, but I could only find an active recipe challenge on DSO, so I decided to do recipes, in the form of OTHER challenges on different boards. Vinnie loves meatballs, so I figured I'd take this opportunity to write down what I do when I make them. It's a pretty free-form process, so that's why the recipe isn't in the traditional format.
Everything is from Tina Williams' Grandma's Kitchen kit (kit link tinawilliamsdesigns.com/scrap/index.php?main_page=product... )
I created a brush with one of her shabby flowers from the kit and used it to stamp the page with different colored flowers. Then I changed the color on three of her bows to suit the challenge. I made a worn and ripped edge on the paper I put on top of the book page, and stamped it with the flower brush.
I exercised my usual eraser brush madness on the picture of Vince and Atha till they were so transparent and full of holes that they blended on to the page.

Food Talk: Pork Meatballs (Note: this a test recipe!!)
454 grams Ground Pork Shoulder (Grind your own if you can)
5 grams Fennel
20 grams Panko (I love the texture of panko over regular bread crumbs)
50 grams Whole Egg
7 grams salt
2.5 grams pepper
2.5 grams garlic powder
1/2 onion, diced finely
This was my favorite meatball so far. I love the texture, the taste of fennel and the lightness of the pork (compared to beef). Negatives: I made 30-35 gram sized meatballs which are too small for sandwiches. I will make 60-70 gram sized meatballs next. I also do not like cooking meatballs in a frying pan and I will try using the oven.
Food Talk Update: These are the 60-70 gram pork meatballs, baked at 375 for 25 minutes. I am going to roll with this. Option: Brown the meatballs, then bake.

At the entrance to the Visitor Complex at the Kennedy Space Center, Florida. The "Meatball" has been the National Aeronautics and Space Administration (NASA) logo since its creation in 1958, except for 1975-1992, when the despised red "worm" was in use. I visited this place on May 9, 2016.
Today I made spaghetti & meatball cupcakes from the Hello Cupcake book! The meatballs are Ferrero Rocher candies and the sauce is seedless strawberry jam. I also used a buttercream recipe that I actually like instead of buying a can of nasty frosting.
