I have measured out the slab of dough and divided it into 5 sections.
Instead of using a pizza cutter, as advised, I used my razor blade lame and made an effort to slice through the parchment as well.
This was a good strategy because it was much easier to handle the pieces without stretching them. The parchment peeled away from the stacked layers without much coaxing.

This bread was made with a Poolish starter.
Basically, instead of having a sourdough culture or starter that we have to keep and feed every day we make a Poolish the night before. It's like a cheat sourdough starter.
I love it. So delicious and the textures in the bread are so amazing. I'll never get sick of it.
