Some bread I made to replace the awful, awful bread that came with my new 2nd hand Sylvanian Families bakery. (It's the old ver. that you can stack a house on)

I don't like them. The baguettes are too thick and the 'flour dusted' look was a failure. I really don't know what sizes these breads are supposed to be in real life. Half my trouble when making minis is that I have no idea how big the item I'm making is in reality so I just guess when I scale them down. Especially if I can't buy the real life version of the mini I want to make here...

On the plus side, I did learn some new things while making these :)

I found the recipe on the internet and It turned out to be absolutely delicious so won't keep very long.
Bread baskets (recipe see under 'Salmon bites' at www.exclusivelyfood.com.au) with vegetarian fillings: Cheesy vegetable (peas, corn, springonion), Savoury mushrooms & curried vegetable (sweet potato, corn, springonion)
Used a flower-shaped cutter instead of a round one and variety of breads e.g. white, multi-grain & wholemeal and instead of brushing cases with butter I sprayed them with non-stick cooking spray - fast, easy and less calories.
A sourdough rye from Hamelan's book. Bit of a disappointment as it wasn't actually black, but I did screw up at least one part of the recipe. It calls for a bit of old bread, soaked in coffee overnight. You're supposed to re-bake the old bread until it's quite dark, and I neglected that step. Not sure how much difference that might have made with regard to color. The coffee gave this some zing. Not something to eat before bed.
My first no knead bread. Just mix everything together and leave it alone. It will "micro knead" itself. -337/365
This recipe was way too much for my petite little bread machine so I just tossed it into a lightly greased casserole dish and covered it with some cinnamon sugar. 350 for about 45 minutes and bingo! giant loaf o' breakfast bread, mmm hmmm.
1 1/2 cups milk (cow's, cashew, whatever)
1 1/2 tsp. salt
2 1/2 tbs. butter 1 tbs cinnamon
4 cups bread flour
3 tbs. sugar
2 1/2 tsp ative dry yeast
1 cup raisins tossed in whole wheat flour/almond meal/ground up oats/something kinda nutty and toothsome
I plopped all this in the bread machine because I am a lazy wang and just baked it in the oven after the rise.
IMG_6229 - Haven't made soft rolls in a while. This time I wanted to go full visuals, with a dark brown spiral. For that I used a pâté-like paste made from tinned mushrooms, garlic, onions and a little dark soy sauce. Cooked then blended the mixture and allowed to cool before use. Enjoy!
Took the risen sponge, added flour, salt, sugar, milk, and butter, then pounded the mix into a dough. Kneaded.
Rise for one hour.
About 4 cups of flour.

Our Challah Bread is made round or in a spiral for this Jewish Holiday of Rosh Hashana. It represents the beginning of the Jewish New Year and a cycle of nature that repeats itself each year. I like to use rasins and/or honey in the recipe during this holiday season.
Bread,
you rise
from flour,
water
and fire.
Dense or light,
flattened or round,
you duplicate

rounded womb,
and earth's
twice-yearly
swelling.
How simple
you are, bread,
and how profound!

Not bread made with some beer as an ingredient...bread made from the grains left after the brewing process...amazing.
