For several years we spent long days in the woods making maple syrup, often snowshoeing through heavy snow to collect the sap.
The syrup after it had thickened up a bit. I was able to store the syrup in a glass jar. It's kept well and I've been able to use it not only on pancakes/waffles, but ice cream and cake!
IHOP got rid of their blue coffee pots and syrup containers ... and replaced them with these fabulous copper and brown things - which are gorgeous, but it just doesn't look like IHOP ...
Be careful not to boil this mixture over. Once it starts to foam turn the heat down and keep stirring until the sugar is dissolved completely. This syrup is nearly done.
