The best maple syrup comes from Berlin, New Hampshire. This weekend was New Hampshire Maple Syrup Weekend, so Jer and I headed to Bisson's for a tour and a taste -- both were fantastic!

Ready to move down in pot size... as you can see the sap is getting more brown...I kept reducing the size of the pot to better control heat and keep from scorching the sap...

Last of the season, better pan and brick setup than the first time. Note the frozen ring of ice from inside the buckets. Here you can see the 3-pan system, going from raw/frozen on the right to more of a "finished product" on the left, ladling from one to the next as I keep adding cold sap to the right.

The syrup has been fully boiled. Now it's poured through a filter. Boiling the sap naturally makes a fine muck called "sugar sand". As soon as the syrup goes through the filter it's ready for canning.

... Vanilla syrup with your coffee? :)

 

Yet another relatively boring shot, but... eh. :)

 

I'll hopefully post more interesting stuff when my health bar is full again, and can go out. The next few days look promising. :)

Yellow syrup in herbal tea shop at Yuen long

Ginger syrup sponge, pre-inversion. This was made according to the Elly Thompson Legendary Syrup Sponge Recipe.

I think this was a old syrup mill. After finding the bottles in the tree near by I wondered if it might have been a still.
