Making snow candy - hot syrup and cold snow!

Barri and I ordered breakfast in from the diner this morning and they always send far too much syrup. Especially since Barri has real maple syrup, which is way better than "breakfast syrup." My french toast, bacon and eggs was awesome though.

After the sap is at a nice rolling boil and has evaproated, I continue to add more sap, reducing each time until I have all of my sap boiling and reduced. Then into a smaller pot... don't want to scorch it.. YUCK !

Syrup being poured on jet engine gears - imitating an ad or something one of us saw of a photographer pouring oil on engine gears.

The best maple syrup comes from Berlin, New Hampshire. This weekend was New Hampshire Maple Syrup Weekend, so Jer and I headed to Bisson's for a tour and a taste -- both were fantastic!

Ready to move down in pot size... as you can see the sap is getting more brown...I kept reducing the size of the pot to better control heat and keep from scorching the sap...
