IHOP got rid of their blue coffee pots and syrup containers ... and replaced them with these fabulous copper and brown things - which are gorgeous, but it just doesn't look like IHOP ...

For several years we spent long days in the woods making maple syrup, often snowshoeing through heavy snow to collect the sap.
The syrup after it had thickened up a bit. I was able to store the syrup in a glass jar. It's kept well and I've been able to use it not only on pancakes/waffles, but ice cream and cake!
Recipe as follows...
1 1/2 C. blueberries (fresh or frozen)
3 Tbs Honey
1/2 C Orange Juice (separated into two 1/4 cups)
1 Tbs Cornstarch
In a saucepan over medium heat mix blueberries, honey, and 1/4 C OJ. Bring to Boil. Mix remaining OJ & cornstarch in bowl until cornstarch is dissolved. Stir in berry mix until thickened.
...the syrup that Eric and Paul boiled last spring...not as much as previous years - I hope we can get thru the winter!
