Free Kentucky Grilled Chicken Meal with Potato Wedges, Mashed Potatoes, Bisquit

Bacon & cheddar chicken with peas and mashed potatoes. Not a terribly exciting image but it certainly was tasty.

I was in the Acme this morning and found a case full of small roasting chickens. So, I spent half the afternoon making the stuffing, mashed potatoes, peas and carrots, gravy and roasting the chicken. I wimped out and bought the cranberry jelly in the can, though.

Dad and I ate this. Very tasty. I think it was probably about 2 pounds of meat for each of us. It included emu sausages, wallabee skewers, kangaroo fillet, lamb, quail, roasted tomoatoes and mashed potatoes. As you can see, the platter is actually a barbeque with live coals in it. HP.

I'm feeling proud tonight...

Believe it or not with all of my culinary adventures, turkey cooking, roasts and whatnot I have, in fact never cooked a whole chicken.

Growing up it was seriously all we ever ate, my Mom would joke that we would grow wings, then I was a vegetarian forever, and now I cook so big, I just never do, but 12lbs worth of 2 chickens was more than enough and it was delicious!

I kept it simple and slow roasted it with just S&P and a little butter and olive oil on top, and stuffed the cavity with fresh orange, rosemary and onion. I made a simple pan gravy and it was fabulous! We all enjoyed our dinner very much.

This year didn’t feel like Thanksgiving. Not because I was alone...I have been celebrating alone for the last few years. I don’t mind it. It just didn’t feel “happy”. Probably a mixture of how crappy this year has been, and also the fact that today was so warm and blah. I started getting hot while making dinner and had to turn a fan on and open the windows....just not right on Thanksgiving.

 

I still made a feast fit for a king, though...all from the comfort of my little room.

 

A Gardein turkey roast, which I simply thawed and deep fried the heck out of. Macaroni and cheese. Mashed potatoes. “Green bean casserole” (just a can of green beans I had, some condensed cauliflower soup, topped with some crunchy fried onions). Some corn. Yams with marshmallows. Hawaiian sweet rolls. Stuffing made with vegan sausage (which I also just deep fried. Don’t judge me...it’s fast, easy and tastes good). Knorr vegetable spinach dip with Ritz crackers (I always have to have that). Cranberry sauce....and sparkling apple/grape juice.

 

I had “Planes Trains and Automobiles” playing in the background while I made dinner, then popped on “Dutch” while I had my feast.

 

It could have been been worse, I suppose.

 

I hope everyone had an enjoyable day, or at the very least, meal.

After returning to Philly, Josh made us some (deeelicious) dinner and we watched a movie. He roasted chicken with carrots, onion, lemon and garlic. There are some mashed potatoes on the plate too. The kind with skins mashed into them. So yummy..

 

He was cooking while I was doing Day 15 of The Shred. The aromas wafting into the living room from the kitchen made working out pretty unbearable.

sorry it's so blurry ugh! i must have been hungry hehe...it's my asian chicken salad from when i took my mum to applebees...it was surprisingly soooo good!

Chicken dumplings with masehd potatoes, white gravy, macaroni and cheese, and jalapeno corn bread.

 

The chicken and dumpling was made from scratch with big chunks of chicken breast, but it lacked something in taste...

Shepard's Pie...my version is with beef instead of lamb. Great comfort food for a snowy day.

quick, late dinner for one: frozen veggies. instant mashed potatoes (w/ soy milk sub.), and a salmon patty.

My wife cooked turkey, stuffing/dressing, mashed potatoes with gravy, and green bean casserole. It was just like Thanksgiving in Augus.

Outstanding. This was an appetizer, but add a few broccoli spears and I'd call it dinner.

A portion of the 3 train loads of dehydrated food headed to the Tarahumara people in the Copper Canyon, who were starving because of drought and failed crops.

 

They received rice, beans, protein, mashed potatoes and vegetables.
