Friday.
Z. willingly eats mashed potatoes, for the first time in her life. And asks for more.
And unfortunately they are crappy fake mashed potatoes from a box. Because I made a big dinner and I thought "I'll give the boys a treat and make them some mashed potatoes" and so I did, never thinking that Z. might actually eat them. If I had known, I totally would have made real ones. Ah, motherhood.
I'm feeling proud tonight...
Believe it or not with all of my culinary adventures, turkey cooking, roasts and whatnot I have, in fact never cooked a whole chicken.
Growing up it was seriously all we ever ate, my Mom would joke that we would grow wings, then I was a vegetarian forever, and now I cook so big, I just never do, but 12lbs worth of 2 chickens was more than enough and it was delicious!
I kept it simple and slow roasted it with just S&P and a little butter and olive oil on top, and stuffed the cavity with fresh orange, rosemary and onion. I made a simple pan gravy and it was fabulous! We all enjoyed our dinner very much.

Tender pork tenderloin served over a bed of red pepper mashed potatoes accompanied and layered with grilled eggplant and sautéed peppers a drizzle of a soy sauce reduction and deep fried caramelized carrot strips is the finishing touch.
Slice into these at Blake's Restaurant in Puerto Vallarta.

In addition, I had minty peas and mashed potatoes along with more gravy. This was quite good and I would definitely eat this again.
Strip steak topped with bleu cheese and sauteed onions and mushrooms, carrot raisin salad, potato salad with bacon, garlic mashed potatoes, and home-grown lettuce with herbs.
It's winter, it's cold and this beef stew with mashed potatoes was perfect. So perfect that I'll probably make it a couple more times before warm weather arrives.

Well, here am I again, trying out Fresh Express ready-to-go meals.
Two pieces of breaded and baked salmon, two mounds of mashed potatoes, some broccoli and tomatoes. Pretty good but I really think salmon just isn't my fish. I'm not in to too fishy fish :)
Mom had a sandwich, to be uploaded later. Sandwiches are better because the bread balances out the too salmon.

This was my dinner from the Wedding: Roasted Chicken with Sauteed Onions, Steamed Asparagus, and Mashed Potatoes.
I couldn't eat the potatoes for obvious reasons, :P but the chicken, onions and asparagus were very, very good! ^o^
The other dinner choices were steak (I don't eat red meat) and some sort of eggplant pasta roll (that had a tons of cheese in it) so I went with the chicken, thankfully.

I like Ikea's meatballs and gravy. And mashed potatoes. And lingonberries. I'm still not sure what a lingonberry looks like in its natural habitat. Time for wiki

I'm pretty sure this was the second dish I ever learned how to cook (*,**). I'm also pretty sure I mastered it by age 5 or 6. Hot dogs with mashed potatoes and cheese melted under the broiler (***,****). It is traditionally accompanied by canned corn, but alas, this meal is also known as "I forgot to go to the grocery store this weekend (*****)."

After a long walk in the badlands I'm hungry and don't feel like cooking very much, but do want something nutritous and healthy. So, I choose Banquet Salisbury Steak TV dinners!
This year didn’t feel like Thanksgiving. Not because I was alone...I have been celebrating alone for the last few years. I don’t mind it. It just didn’t feel “happy”. Probably a mixture of how crappy this year has been, and also the fact that today was so warm and blah. I started getting hot while making dinner and had to turn a fan on and open the windows....just not right on Thanksgiving.
I still made a feast fit for a king, though...all from the comfort of my little room.
A Gardein turkey roast, which I simply thawed and deep fried the heck out of. Macaroni and cheese. Mashed potatoes. “Green bean casserole” (just a can of green beans I had, some condensed cauliflower soup, topped with some crunchy fried onions). Some corn. Yams with marshmallows. Hawaiian sweet rolls. Stuffing made with vegan sausage (which I also just deep fried. Don’t judge me...it’s fast, easy and tastes good). Knorr vegetable spinach dip with Ritz crackers (I always have to have that). Cranberry sauce....and sparkling apple/grape juice.
I had “Planes Trains and Automobiles” playing in the background while I made dinner, then popped on “Dutch” while I had my feast.
It could have been been worse, I suppose.
I hope everyone had an enjoyable day, or at the very least, meal.
