Tender pork tenderloin served over a bed of red pepper mashed potatoes accompanied and layered with grilled eggplant and sautéed peppers a drizzle of a soy sauce reduction and deep fried caramelized carrot strips is the finishing touch.
Slice into these at Blake's Restaurant in Puerto Vallarta.
We had some leftover sloppy joe filling and a serving of mashed potatoes and gravy from a crazy chicken place. I started by warming up the sloppy joe filling in a cast-iron skillet that looks amazingly like the one in the photo.
Then I broke up the mashed potatoes and gravy and spooned that over the sloppy joe filling. That all went under the broiler to warm up. When the potatoes were warm and soft, I poured on 4 well-beaten eggs. Back under the broiler until the eggs just began to brown. Then I topped it with a handful of grated cheddar cheese and broiled it until the cheese melted and the eggs had browned nicely.
Cut into wedges and served with hot coffee makes for a pleasant breakfast for two hungry people (or four less-hungry people)
