A friend stayed over the past weekend and one evening she cooked up an impressive meal with just a few knife chops, lemon and olive oil. Of course when I ask her about it, she tells me it was just all improvised. This girl's amazing, and every time she visits, I always learn a bit. Though this time with that dinner, she's inspired me to go beyond my usual motions in the kitchen and foray into new repertoires and palates.
As for the mashed potatoes here, I saw Kimberley's recipe/photo a year ago, and they looked delicious. I love mash, but had never made 'em in my life, so I decided to start easy with these. They turned out well, except for the potatoes taking ages to soften.
(Note to self: cut russet potatoes in half to speed up process next time.)
Me at work on a so-called Fish Dish. Including onions, cod fillet and mashed potatoes. Twenty to twenty five minutes in a 220 degrees oven using the grill for the last 5 minutes to get a crispy top.
We made two batches of oven roasted pork ribs for dinner tonight.
Marc did the mashed potatoes while i made the orange vinaigrette.

WOW! I'm glad I got the guts up to try this because it was AMAZING! Kangaroo is like the best steak you have ever had. This was from a French restaurant in Marigot, St. Martin. The chef cooked the kangaroo in a yummy peppercorn sauce. She served it with curry mashed potatoes, an onion marmalade, and something that had zucchinni onions and tomatoes in it that tasted like a thick spaghetti sauce. Finally to top it off she had THE BEST french fries I've ever had. Aparently the french really make french fries! MMM...I really want this again after typing this up...

And tap water to drink.
I had Choucroute 'Zédel' £16.50
And a little pichet of Riesling d’Alsace £16.20

Papa Rellena: Twice cooked mashed potatoe (deep fried), stuffed with seasoned beef, eggs, raisins and Peruvian spices, served with salsa criolla - $5.50
My mashed potatoes, I smooshed them around a bit so it looked like I "ate' them. :P
This was my dinner from the Wedding: Roasted Chicken with Sauteed Onions, Steamed Asparagus, and Mashed Potatoes.
I couldn't eat the potatoes for obvious reasons, :P but the chicken, onions and asparagus were very, very good! ^o^
The other dinner choices were steak (I don't eat red meat) and some sort of eggplant pasta roll (that had a tons of cheese in it) so I went with the chicken, thankfully.
