Although I tease my brother about this all the time, I can't seem to walk away from Ikea's restaurant either! I usually don't get the Swedish meatballs, but this time I did. Yum on that lingonberry sauce!
My wife prepared turkey, sweet potato casserole, cream style corn, green bean casserole, turkey, stuffing, mashed potatoes and gravy.

Two baskets harvested that day, another 2 baskets the following and the day after that. Needless to sat I'm scavenging all the possible potato recipes out there! :)
First, a rub of ginger, garlic, black pepper, white pepper, cayenne pepper, worcestshire sauce, red wine, sugar, sage, and thyme was brushed on the ribs. The ribs were then cooked at 300 degrees, covered in foil, for an hour and a half, turning halfway through. Then I brushed on some BBQ sauce: I used a brand called Organicville, which is gluten free and made with agave nectar. In comparison to other sauces, it was lower in sugar, sodium, and carbohydrates. After brushing on the sauce, the ribs were cooked for an additional twenty minutes, covered in foil, at 400 degrees.
During the last portion of rib cooking, I cubed and boiled some sweet potatoes. After draining the potatoes, I tossed them in sauteed red onion and garlic, then sprinkled the potatoes in a little thyme, black pepper, and butter.

For Easter dinner my wife and I ate at a friends house. Our meal consisted of ham, brown rice casserole, asparagus and bacon casserole, mashed potatoes, corn, potato salad and deviled eggs.
Jim met me at the Valdosta Country Club's Grill for supper. Guess What? On the buffet, they had spare ribs. They were delicious.
Before I get too far behind in uploads again, this was our main Thanksgiving meal while on our Death Valley road trip. Not the greatest photo, but at least I remembered to take one. We were hoping to get the Thanksgiving day special meal here, which we've had before, but that didn't start until 3pm this year. This was good enough, though. I had a hot open face turkey sandwich and Petra had a grilled turkey sandwich. Both with real turkey, not loaf, so that was good. The kids were happy to choose what they wanted, and they ate it all. The standard grilled cheese for Matthew and kraft dinner for Jeremy.
Oh, and we had soup and salad for Thanksgiving dinner. Stovepipe Wells hotel restaurant was closed for due to a kitchen fire, so it was kind of like camping over there.
A vegetarian Greek stifado. Serve with mashed potatoes, polenta or noodles.
Here is my recipe:
6 cups of quartered mushrooms
1 large onion, halved and sliced
3 cloves of garlic, peeled and minced
2 tbsp of olive oil
1 large can of tomatoes
3/4 cup of red wine
1 tbsp red wine vinegar
3/4 tsp of cinnamon
1/4 tsp nutmeg
2 tsp oregano
1 bay leaf
1/2 tsp orange zest or a slice of peel without the pith
1/2 of currants
1/2 of a veggie cube
Saute the onions, garlic and mushrooms for 10 minutes.
Add the tomatoes, red wine, red wine vinegar, the herbs and spices, orange peel zest, 1/2 veggie cube and the currants.
Let simmer on the back of the burner for the afternoon. Add a little water if it thickens too much.

Fantastic. Very similar to something I had at fire a few weeks ago but executed even better. The ramps were a great addition.
No Lumpy Potatoes here...for all the mashing and smashing we do...solid/heavy, this is not one you'd want to throw across the kitchen.

Tonight we had a tasty treat: Meatlof Cupcakes :-) They were delicious. This was my wife's first time making them and she saw room for improvement (all I saw was a delicious tasty treat). We saw them on a Food TV show a while back and fell in love with the idea, we thought to ourselves "Zoey loves cup-cups so if we make meatloaf with mashed potato icing she'd love it". Unfortunately we were dead wrong. Zoey took one look at them and got so excited thinking they were cup-cups. After taking one bite she realized what was going on and a massive tantrum ensued. So lesson learned, don't give a kid who loves cupcakes something that looks like one but isn't one.
