I felt so good about tonight’s dinner. I haven’t made a healthy homemade meal in a whole. Made the rice, steamed the broccoli and cooked chicken in air fryer (my first time) and it all came out great.

Homemade Vanilla Extract
1/2 cup vodka
1 1/2 madagascar vanilla beans (split open and cut in half to fit in bottles)
Let steep in jars for at least 2 months. Keep in a cool dark place and shake once a week. You can keep adding vodka after you use some of the extract.
I used paper left from the apple butter tops to make butterfly labels and tied them with raffia

There are lots of things you can make at home for much less than you can buy them at the store. Not only does it save money, but it saves time as well. No more quick trips to the store to get brown sugar when you start baking and realize you’re out. I’ve been making my own brown sugar for quite a while, mostly because it can be difficult to find organic brown sugar when you live in a rural area and it’s pretty expensive when you do actually find it! I definitely couldn’t get organic brown sugar for less than $1.50/lb, which is about what this costs me.

I got a yogurt maker for Christmas (thanks D!) and the fresh yogurt has been deemed delicious by the littles.
W likes homemade strawberry jam on his and A likes local raw honey. The texture is a little fluffier than the greek yogurt I usually get, but the result was nice and tart from our starter, and I think from incubating it for 8 hours. I like the little jars - heehee!

As I mentioned in my 365, we are going to switch from bottled BBQ Sauce to a homemade one. This is my recipe....
3/4 cup minced onion
1/2 cup minced garlic
Cook the onion in some butter or olive oil for five minutes. Add the garlic and cook another five minutes.
Add all the rest to the pan...
2 tbl lemon juice
4 1/4 cups ketchup
1 cup tomato juice
3/4 cup light brown sugar, packed
6 tbl. molasses or pancake syrup
2 tbl. soy sauce
1/2 cup worchestershire sauce
1/2 cup chili powder
4 tbl. apple cider vinegar
1 1/2 tbl. chipotle peppers in adobo, pureed
1 tbl. sea salt
1 tsp. black ground pepper
Simmer for 1/2 hour, and then use an immersion blender, blender or food processor, to puree the sauce.
Allowing it to chill overnight lets the flavors really intensify.

We have themes for dinner so planning is easier. Thursday night is Kid's Choice, so we made some homemade pizza. Herbed 40% whole wheat crust, tomato base, cubed ham, green bell chili, and pickled zucchini (from a previous canning project) with shredded Colby Jack cheese on top.
EDIT: Yes, some got eaten before the picture was taken.
