Week 3 of our new Keto diet, showing how we are trying to get the balance right. Two meals a day, first about noon to 1 pm, last about 6-7 pm, giving a period of approx 16 hours during which the body has a chance to utilise existing fats within the body. They call it intermittent fasting, we call it less cooking and dishes to wash and more time for important things :-)
The traditional recipe calls for ground pork, some scallions, perhaps chili slices. But it was late and I didn't feel like going to the grocery store. So I whipped this up with some chicken I had in the freezer (I minced the chicken until fine), frozen peas, and dried shrimp that I soaked for about 10 minutes. Result: Delicious impromptu dinner!
Though... the ground pork would've been tastier :) Also, I might've wanted to add less water.. still yummy though!
Trying out a few new foods - enoki mushrooms are a first.
Bought a device which is meant to mash potato but we used it for steamed brocolli and cauliflower with good results. Slowly realising fillet steak is a favourite. Bacon wrapped around the enoki was interesting, quite chewy.
everyone on the web has been making bread lately, so i gave it try with Nigel Slater's recipe. it wasn't bad. a little too dense for me, but still good. I ate this with some yummy brie and fig jam. Mmmmmm.....
It's been a while since I've cooked this Chinese style roasted chicken, taught to me by my mother who learned it from her mother.
It's a simple recipe, using garlic, dark soy, Chinese five spice, soy bean paste, green onions, and salt. I marinated it overnight and cooked it the air fryer. It turned out great!

I am happy to say, while I started off not knowing WTF I was going to do, I pulled it together and put together a damn tasty meal.

Finally....! After reading Narnia and Edmond's craze for Tukish Deligh, my crave also finally came through. However, this gourmet turkish delight was rather disappointing - it's merely very sweet, starchy and soft candy. More like the semi-hard jelly candy you find in the stores. *Sigh*

Decided to check out @peadsandbarnetts at the farmers market. They grow heritage varieties of pigs in San Diego County. Boy, these pork chops were good! Brined and grilled with a simple spice rub. Served with a “succotash” of corn, baby black kale, baby sweet peppers, and onion.
