All that brown, crusty goodness on the outside is parmesan cheese. The inside is 1.5 lbs of gruyere. Sadly I added too much salt to the base, but now I know better, so my next cheese soufflé will be that much closer to perfection.
Today's cooking class was focused on BASIC KNIFE SKILLS. Learned lots and out of 15 students there was only one cut! Not bad
