Chef Katherine See, of Slade Gorton Co., Inc., describes seafood product development at the 2011 Baird Symposium on sustainable seafood. The Ronald C. Baird Sea Grant Science Symposium was named after the former director of the National Sea Grant Program for his contributions to the Sea Grant program nationally as well as to Rhode Island Sea Grant itself.

Celebrating a decade of challenging chefs to get creative with California Dates, The Perfect Date Chef Challenge showcases nine previous top winners all competing in three culinary categories to determine who prepares the best Date dish. Similar to cooking shows Iron Chef and Top Chef, the creations are prepared in front of a live audience and competitors race against the clock to get their dishes completed in time. About 400 people attended and tasted this year’s date dishes prepared by the chefs.
