I've worked in a few kitchens in my lifetime. Or, should I say in another lifetime? To this day, I still get a kick out of poking my head into a restaurant kitchen, greeting the chefs and cooks, and snapping a photo or two as they work. NSHR1 switches out the Chef Boyardee factory in Milton, PA. Now owned by ConAgra Foods, this is the only customer on the Union Country Industrial Railroad on the east side of the Susquehanna River. Chef Boyardee was founded here in 1928, and continues to produce a variety of Italian foods at its original site here in Milton.

À l'intérieur de l'enceinte vivent une centaine d'hommes d'armes (des faidits), leurs familles, ainsi que le seigneur du lieu, Raymond de Pareille. À l'extérieur, au pied des murailles, s'est constitué un véritable village cathare de 600 habitants avec son évêque, ses diacres et ses fidèles.

Le roi de France, qui n'est autre que Louis IX (plus tard Saint Louis), n'a aucune envie d'user son armée dans la conquête de Montségur aussi longtemps que celle-ci ne lui cause aucun tort. Chacun s'accommode donc du statu quo... jusqu'à un jour de mai 1242 où les chevaliers de Montségur apprennent que tous les inquisiteurs de la région ont fait halte dans un village voisin pour y passer la nuit.

Ces chevaliers ont tous des comptes à régler avec l'Inquisition et, à la différence des cathares, ne se dispensent pas de tuer quand l'envie leur en vient. Le 29 mai 1242, une trentaine d'entre eux, sous le commandement d'un seigneur dont la femme et la fille ont été torturées et brûlées par l'Inquisition, se ruent sur le village d'Avignonet, près de Castelnaudary. Dans la nuit, ils massacrent les onze inquisiteurs dont leur chef, le tristement célèbre Guillaume Arnaud.

Le pape exige aussitôt qu'il soit mis fin à l'impunité de Montségur, qualifiée de «synagogue de Satan». S'ouvre le dernier acte de la croisade des Albigeois.
