If you ever went to Chez Nous, think about the kitchen space. It seems to be about the same size (a little longer), but with about 4-5 men *hustling* in there now. This chef shows great concentration when slicing the salmon. Almost a ritual performance. Calm in the midst of the frenetic activity of the waiters and the noisy hubub of the diners.
