LOS PIMIENTOS

 

El pimiento es el fruto hueco de una planta herbácea que recibe su mismo nombre. Pertenece a la familia de las Solanáceas y, en concreto, al género Capsicum. Las Solanáceas constituyen una familia que incluye alrededor de 75 géneros y unas 2.300 especies de plantas productoras de alcaloides tóxicos, entre las que se incluye la belladona, la mandrágora y el beleño. Son pocas las Solanáceas comestibles. Entre ellas se encuentran el pimiento, el tomate y la berenjena, de gran relevancia en la alimentación.

La planta del pimiento es originaria de México, Bolivia y Perú, donde además del Capsicum annuum L. se cultivaban al menos otras cuatro especies.

Los pimientos llegaron a Europa en el primer viaje realizado por Colón en el año 1493 a América. Los indígenas americanos conocían el fruto por el nombre de chili, pero los españoles y portugueses lo bautizaron con los nombres de pimiento y pimiento de Brasil.

Su cultivo en España comenzó a realizarse en el siglo XVI. Posteriormente se extendió a Italia y desde ese país a Francia para distribuirse por toda Europa y el resto del mundo gracias a la colaboración de los portugueses.

La introducción del pimiento en Europa supuso un avance importante en las costumbres culinarias debido a que se empleaba como complemento de una especia muy popular, la pimienta negra. De hecho, llegó incluso a sustituirla. Su consumo en Europa data de hace varios siglos. Sin embargo las variedades de pimientos grandes, suaves y poco picantes que se consumen en la actualidad se consiguieron a principios del siglo XX gracias a los cultivos intensivos.

Las variedades de pimiento se clasifican en dos grandes grupos según su sabor en dulces y picantes.

 

Green capsicum stuffed with quinoa mixed in with:

 

• a good glug of olive oil

• juice of 1/2 lime

• good splash of Maggi

• salt, ground pepperberry

• 1/2 chilli, finely diced (or more, to taste)

• good sized clove of garlic, crushed in a press

• handful of Kalamate olives, each pitted and quartered

• small tomato, finely diced

• dash of curry powder

• the leaves of several sprigs of fresh basil, finely chopped

• more herbs of your choice (I used dried 'GFresh Italian')

 

Whisk all of the above together in a medium-sized bowl and let blend for at least a few minutes.

 

(Capers would also be nice...)

 

Cook 1/2 cup quinoa (which was too much, but leftovers are nice) according to the packet instructions — I used 'Tricolor'.

 

Cut as many 4-lobed capsicums as you want to cook in 1/2, take out the seeds and white flesh.

 

Note: use only 4-lobed peppers, so that they'll sit well in your roasting pan. (3-lobed ones will wobble all over the place! :-) )

 

Sprinkle the shell with a bit of salt, and stuff with the mixture. Place in a roasting dish — I used a 20cm glass dish, but you'd probably need more for two or more peppers.

 

Sprinkle with grated cheese (I used cheddar, but Parmesan would probably do nicely, too, and smokey paprika.

 

Cover and cook in a combi microwave for ±25-30 minutes @ micro 1/convection 180°.

 

Nice nourishing vegetarian meal, which you could turn into Vegan by using Vegan 'cheese' or marinated grated firm tofu...

Capsicum (or pepper in the U.S., Canada, United Kingdom and Ireland) is a genus of plants from the nightshade family (Solanaceae) native to the Americas, where it was cultivated for thousands of years by the people of the tropical Americas, and is now cultivated worldwide. Some of the members of Capsicum are used as spices, vegetables, and medicines. The fruit of Capsicum plants have a variety of names depending on place and type. They are commonly called chilli pepper, red or green pepper, or sweet pepper in Britain, and typically just capsicum in Australia, New Zealand, and Indian English. The large mild form is called bell pepper in the U.S. and Canada. They are called paprika in some other countries (although paprika can also refer to the powdered spice made from various capsicum fruit).

 

The original Mexican term, chilli (now chile in Mexico) came from the Nahuatl word chilli or xilli, referring to a larger Capsicum variety cultivated at least since 3000 BC, as evidenced by remains found in pottery from Puebla and Oaxaca.
