Cake International Show 2009 Silver award winner.

After my chocolate test layer cakes in the tiny toaster oven...I decided to try a carrot cake. It is pretty dense and moist cake and probably should have stayed in about 10 minutes longer, but the toothpick test showed clean and therefore....baked. So, that's all one of the layers got...the second..I left a bit longer and it was probably better. The piece of parchment on the bottom peeled off easier and the bottom of the cake wasn't quite as sticky ...

 

The word on my oven is...it may be getting repaired on February 14th...yaaaayyyy!!!!

I'll be able to bake bread once again. This oven is just too tiny for that.

 

Here is the recipe for the carrot cake if you'd like to try it. I cut it from a magazine many years go.... but, use it all the time. Add or subtract as you like with spices and raisins . .....

 

NUTTY CARROT CAKE

 

3/4 cup butter

1 1/2 cups sugar

3 eggs

2 cups shredded carrots

1 tsp vanilla

1 1/2 cups flour

2 tsp. baking powder

2 tsp. cinnamon

1 tsp. baking soda

1/2 tsp. salt (there is plenty for me with just the salty butter)

1/2 cup milk

1/2 cup chopped nuts (we use walnuts...sometimes toasted)

 

........(we also like to toss in some raisins....and add some other spices too.... a smidge of Ginger, teensy "sprink" of Nutmeg and a bit of All Spice) all optional and to your own taste of course. Once you make it... you can decide which spices might enhance the flavour for your own palate.

 

Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating until well blended. Add carrots and vanilla; mix well. Add combined dry ingredients alternately with milk..mixing well after each addition. Stir in nuts. Pour batter into a greased 9 inch tube pan or 9 X 13 inch cake pan. Or, two round 9 inch pans.

 

Bake at 350 F (180 C ) for 55 to 60 minutes for tube pan Only 45 to 50 minutes for 9 X 13 pan. Round pans take about 30 minutes. Test with toothpick for done-ness. Cool cake completely before frosting.

 

Cream Cheese Icing

1 125 gram pkg cream cheese

1 Tbsp. milk

1/2 tsp vanilla

3 cups sifted icing sugar (test every so often to determine how much to suit your own taste)

 

Combine softened cream cheese and several large spoonfuls of icing sugar; stir til well blended. (If you didn't sift the sugar there may be lumps..) Add vanilla, blend well; add more icing sugar .... add a tiny bit of the milk alternately with icing sugar making sure it does not get too runny. Barely a dribble of milk and you have to add another cup of sugar.. ... I prefer to maintain the cream cheesy taste and don't add nearly the amount of icing sugar or milk the recipe calls for. Check every so often to see how it tastes. Wait til cake is completely cool before frosting.

The inspiration for this cake mainly came from Jamie Anderson's photostream. (apparently the cakes are done by his wife though). The customer gave me creative freedom and I had always admired a similar cake. It is iced in swiss meringue with gumpaste flowers. I put a big finger dent in the front of the cake when I just HAD to mess with it after it was finished. When will I learn??

My grandmother made this Depression era cake for birthdays. Also known as Wacky cake, Depression cake, Poor Man's cake, Three Wells, among others.

This cake was for a 2nd birthday. It's a 1/4 vanilla sheet cake with vanilla buttercream frosting. The firetruck and flames are made from fondant.

This is my first wedding cake! My first big three tier cake covered in pale pink fondant. Roses and blossoms all made with fondant. Top tier is lemon, middle tier is chocolate and the bottom tier is vanilla.

 

This was very nerve wracking for me as it was my first wedding cake. I had to assemble on site as the reception location was up several flights of stairs so I was not able to transport the cake stacked. And thank goodness I didn't have to transport this cake assembled cake as it was sooo heavy!

 

I got there about 4 hours before the reception started and thank goodness I started early as I got the assembly done and just started on the decorating as a huge flurry of people came to decorate the place, set up speakers and balloons and arches in the same area. At times it was hard to stay focused with loud hip hop music blasting from the speakers :) And at times it was hard for me to decorate under the scrutiny of people watching me.

 

Overall I was really pleased with the way the cake turned out but of course I can see all the flaws and would definitely change things if I had to do it over again. Lots of lessons learned!

This is a chocolate mud cake with dark chocolate ganache covered in fondant that i made myself, the ribbon is still drying and i want to brush the cake with lustre , not yet done, please excuse my splattered lazy susan :o)

Slightly taller version: cake, flowers and all pearls in fondant. I haven't got a pearl mould so I rolled fondant balls and threaded them on to cotton. I know that the flowers need more work and will persevere. The diamante are an old pair of earrings. The flowers are a bit clumsy, I will go back to using Flower Paste as I normally do.

I absolutely loved making this, even though I was dithering about the design for aaages! The customer has the baby's nursery decorated in wallpaper from Debenhams, and sent me the wallpaper swatches as inspiration.

 

Bambi was really difficult to model, and I went through about three heads. I finally had to admit defeat and go with this final head - I am not happy with him at all.

 

I loved making Thumper, and made him in less than half an hour, which is a record for me. The little bluebirds were drawn, painted and cut out before placing (all edible) - I do not have the guts to paint straight on to the cake.

This cake is based on the British banoffee pie. Layers of banana cake filled with toffee (dulce de leche) and fresh bananas.
