Can one ever have enough brushes?

Pepper stuffed with quinoa and spices.

Select (preferably) bell peppers that can be cut into halves — they sit better in a baking dish.

Cook the amount of quinoa you want according to the directions. I cooked too much: about 1/3 of a cup would have bee about right for 2 peppers, but quinoa can be used for lots of things!

Prepare a sauce: I used olive oil, lemon juice, a splash of Maggi sauce, diced Kalamata olives, 1/2 diced jalapeño chilli,a small diced tomato, a couple of forkfulls of capers, a tablespoon of dried Greek oregano, a dash of dried basil, and a couple of crushed garlic cloves.

Mix that all up and let it blend for a few minutes.

Heat your microwave/convection oven to about 180°C (360°F)

Stuff your peppers, garnish with some grated cheese and dust with smokey paprika. Place in an oiled baking dish, covered.

Cook ±35 minutes covered, and let sit for a little while longer, until the pepper shells are soft.

Warm your plates (if you haven't already on the top of the oven, and enjoy! :-)

Awoke to more of the white stuff this morning, looks as though this is going to hang around for a few days.

Stuffed tomatoes (Mahshi). A popular dish in the Middle East. Styled, photographed and edited by me.

These stuffed pork chops are boneless chops filled with spinach, sun dried tomatoes and mozzarella cheese, then seared to golden brown perfection. They’re perfectly tender and full of flavor. An easy dinner option that’s quick enough for a weeknight, yet elegant enough for entertaining!

This cupcake definitely caught my eye when I found it on the Food Network web site...I just had to try this. Recipe can be found at 52 Cupcakes.

Dec. 7, 2022: I found stuffed animals in trees this morning while walking in Pepper Tree Playground in Newbury Park, California. An anonymous area resident has left about 30 Christmas-related teddy bears in the Western loop of the park. Joggers and walkers report that the bears started arriving over the weekend. The bears also were present last December.

Boy, I could write an attention-getting headline, "Bears Spotted in Local Park." 334/365

These were so good... mushrooms stuffed with macadamia nut cheeze, topped with raw cranberry sauce and chives... dehydrated for about 4 hours. Yum!

New stuff coming soon...

My workplace.

Fantastic stuff from John (kd_230692)--two cute cloth prints, a tiny Marin Chiclana doll, and two WONDERFUL customs! Thanks so much, John!

Green capsicum stuffed with quinoa mixed in with:

• a good glug of olive oil

• juice of 1/2 lime

• good splash of Maggi

• salt, ground pepperberry

• 1/2 chilli, finely diced (or more, to taste)

• good sized clove of garlic, crushed in a press

• handful of Kalamate olives, each pitted and quartered

• small tomato, finely diced

• dash of curry powder

• the leaves of several sprigs of fresh basil, finely chopped

• more herbs of your choice (I used dried 'GFresh Italian')

Whisk all of the above together in a medium-sized bowl and let blend for at least a few minutes.

(Capers would also be nice...)

Cook 1/2 cup quinoa (which was too much, but leftovers are nice) according to the packet instructions — I used 'Tricolor'.

Cut as many 4-lobed capsicums as you want to cook in 1/2, take out the seeds and white flesh.

Note: use only 4-lobed peppers, so that they'll sit well in your roasting pan. (3-lobed ones will wobble all over the place! :-) )

Sprinkle the shell with a bit of salt, and stuff with the mixture. Place in a roasting dish — I used a 20cm glass dish, but you'd probably need more for two or more peppers.

Sprinkle with grated cheese (I used cheddar, but Parmesan would probably do nicely, too, and smokey paprika.

Cover and cook in a combi microwave for ±25-30 minutes @ micro 1/convection 180°.

Nice nourishing vegetarian meal, which you could turn into Vegan by using Vegan 'cheese' or marinated grated firm tofu...
