Stuffed Artichoke

recipe by: My best friend and I

1 Artichoke

1 cup Italian seasoned bread crumbs

1 finely crushed garlic clove

1/3 cup grated Parmesan cheese

1/3 cup grated Romano cheese

2 ounces olive oil

1/4 lb. lean ground chuck

Lemon Slice (optional)

Clean artichoke by snipping pointed ends of each leaf.

Boil artichoke until leaves are tender not falling off.

Drain and cool artichoke upside down on wax paper.

Saute' ground chuck set aside.

Bowl of cheese set aside.

Mix bread crumbs, garlic, olive oil, ground beef.

Form a moist consistency.

Note: Add olive oil not water if mixture feels dry.

Scoop mixture into artichoke, separating each leaf as

you go. Lavishly sprinkle cheese over artichoke and

another dash of olive oil. Add lemon slice with a slight

Squeeze to top.

To Serve: Steam in covered double boiler until cheese

forms a warm melt over leaves.

Recipe varries from household to household in New Orleans.

Southern Pacific 1774 is 2-6-0 steam engine. It and was built by Baldwin Locomotive Works in 1901. The locomotive was donated to the town of Globe Arizona in November of 1956. It is currently displayed in Veteran’s Park there
