My lunch today - an experiment with stuffed chillies. So good hot or cold! I also experimented with turning my rice slightly pink, which I did by placing two pickled baby beetroots in with the rice while it cooked. It did turn the rice a bit pink, and it didn't taste of vinegar at all, so I was quite pleased!

 

Stuffed Chillies

 

1 clove garlic

1/2 shallot

Small piece ginger

Small handful basil, mint and coriander leaves

300 g pork mince

2 tbsp fish sauce

1 tbsp soy sauce

1 tsp sesame seed oil

Juice 1 lime

4 shredded lime leaves

100g / 5 medium-sized mild chillies

1 small chilles, sliced

 

Place the garlic, peeled shallot, ginger and herbs in a food processor and mince them finely. Then add the pork mince and process until smooth and mixed well. Then, add the liquids and lime leaves and mix again.

Cut the chillies in half and deseed them, the stuff with the pork mince. Leftovers can be formed into burgers as well. Bake on a baking tray in a preheated oven at 190c for 20 minutes.

Getting the munchies? Coz it’s that season that attracts weight gain. The air makes you hungry all the time and you can’t stop but eat everything that comes your way. The lazy wind blows stopping us psychologically from stepping out of the blanket and then clearly, exercise is out of the question. 1. Eat using a fork and knife. Eat in a smaller plate.

 

Yeah, the very thought of so much effort being put in every bite reduces appetite. Trust us it does. Great! Eat what you like but eat it with a fork and a knife. By the time, you just finish that 1 big slice of pizza you are done, eating. You got your pizza and you ate it too, but just enough this time.

 

Eat-in a gorgeous plate and preferably a smaller one. The gorgeous part is for it keeping you distracted and the smaller one, to remind you that you’ve already had a plate full. You’ll either not eat more or just fill the small one half this time. So, 1.5 times the half plate would still make it lesser or equal to the big plate. Good job!

 

2. Eat veggies and fruits

 

Stuff your fridge with just these. Get your favorite veggies and prepare them the way you like. Of course, not with butter and cheese.

This is my fixed gear "rough stuff" bike, with 700 x 38 gravel tires. I've swapped out at least a half dozen different bar configurations, but I really wanted to have this be an upright bike. I THINK these Velo-Orange Left Bank bars feel dialed in - we'll see after I take it out for a longer trail ride.
