Sigh...another Mini Spirit. From the wonderful Beth Webber pattern. Still not tired of these. I made her wig about 8 months ago, just waiting for the right doll.
...and now I'm over French Toast. I'm not a fan of eggs. In fact, I don't eat eggs unless they are baked into something. I liked the stuffing part I made from cream cheese, jam, and fresh strawberries, but the egg part, I wasn't a fan of. Plus I wish I'd made my own bread with this because the Italian bread I purchased just didn't do it for me.
Filled with brown rice, black beans, sweet kernel corn, and mushrooms.
Not a very pretty picture, but this was dinner, so there was no natural lighting to be had.

--Green bell peppers baked @ 400 until tender
--Filling: Wild rice, garlic, yellow onion, S&P,oregano, mediterranean seasoning, pork seasoned w/garlic powder
--Topped with: Basil marinara & parmesean
Stuffed jalapeños part II. Wrapping them with bacon like the last time was a pain in the ashtabula. So, I browned some sausage with extra spices, cooled it down, and then folded it in with cream cheese and Mexican three cheese blend.
“Bad Ass” Jersey Shore Fightin’ Texas Aggie Ring chopped the tops off of many jalapeños. Then, using his trusty jalapeño knife, he gutted the ribs and seeds insides of them like they gut a pig before a BBQ. Believe me, I’ve been there.
Aggie Ring “stuffed the Hell” of the little jalapeños with the cheese/sausage mixture. He then smoked them over alder wood @ 250 degrees for about an hour. Just long enough to brown the top of the cheese and soften the jalapeños. But, not so much as there wasn’t still a bit of a crunch when you bit into them.
They were most excellent.
Stuffed Pepper with chorizo, cilantro rice, white onion, garlic, red kidney bean, pine nuts, colby cheese, and smoked paprika. Topped with sour cream and cilantro crema.
