Special Needs Room 2 got a foot stool in their room as a new bed. They LOVE it. Here is Meatball taking a turn. Now if he could actually FIT on the footstool, that'd be great.

Chinese New Year Recipe: Lion’s Head Meatballs

This is totally not my recipe at all. I wanted to make something that was homey and satisfying. This meatball pie seemed like a best way to do that.

1 refrigerated pie crust
18 frozen cooked meatballs
1 cup frozen corn
3/4 cup salsa
3/4 cup shredded cheese
shredded lettuce
sour cream
Preheat the oven to 375 degrees. Prepare the pie crust as the package directs. I used two 9 inch ready-made pie crusts. Divide the meatballs between the two pie crusts, placing them in the middle of the pie crust. Mix the corn and salsa together and pour over the two piles of meatballs. Fold the edge of the pie crust up over the filling.
Bake for 35-40 minutes or until the crust is brown. Sprinkle the top with cheese and bake for another 5 minutes.
Top with lettuce, salsa, and sour cream. Could feed two or one hungry person.
A childhood favourite. Not that you can really see the meatballs here but they are very tasty and the flavour remains in your mouth for ages. Served tonight with salad. A wonderful, simple meal.
Took a little trip to Ikea on Boxing Day for my desk. And no trip to Ikea is complete without meatballs!
For my main dish at Ciya, I had Lahm with Kiraz, meat with cherries. It was stewed in a light tomato sauce.
Someone asked us why we took him oversea, no matter how difficult it was...emm, I just don't know. Isn't he a great big cat?
