Xoe said it was like squishing brains in her hands and that she liked it.. She wondered if she was turning into a Zombie... or a Xombie...
omg this was SO good! I n the mix:
6 lasagna sheets (follow directions on box to cook, I boiled them for 8 minutes, then cooled and put them back in the pan with a little butter to keep them soft)
3 cups of sauce (we had some in the freezer that was made by Dave's son's MIL)
about 8 small meatballs, mashed up with a potato masher and added to the sauce (these were from Market Basket and also from the freezer)
1/2 cup each of the following grated cheeses: mozzarella, parmesan, and fontina
1 cup bechamel sauce (takes about 5 minutes to do)
Oil the lasanga pan, then add a small amount of sauce on the bottom, then pasta, then cheese mixture. Repeat that for the next layer, and top with the béchamel. Cook at 350 for about 45 minutes, then turn on the broiler for a minute or two to brown the bechamel. SO GOOD!

Dec 16: Yum, Swedish meatballs. I was still craving them after Meagan's Christmas party, so I made these. The beef, pork and bread mixture made them tender and delicious. Modifications: substituted allspice for cardamon in the meatballs, took the sour cream out of the sauce, put some red wine in along with a lot of salt and a little chicken broth and ate them with Nanking cherry jelly instead of lingonberry jelly. Served with pearl barley and a green salad.
Note: Made a half batch. Jeff and I can't eat 50 meatballs!
Veal and ricotta. The first time I ordered meatballs in a restaurant and probably the last. They were OK.

I received a lovely note from Meatball's mom...she sent photos and an update!
Dear Sherrie:
As I am thankful to you for taking such wonderful care of Meatball, I am happy to report that he has a new and very special best friend. In November, we adopted a 4 month special needs kitten from the Castaway Critters, an all foster rescue organization. Our kitten, Jingle, was born with cerebellar hypoplasia, the same disorder that affects Shy and Chrissy. He and Meatball sleep together, groom each other and Meatball enjoys all the kitten's new toys. (The Turbo scratcher and collapsible cubes are his favorites.) Although Meatball, the cowardly lion as I call him, has the the courage to leave the basement playroom to explore, he actually still prefers and retreats to the basement. Even though he is disabled, Jingle still has the mind of a kitten but his body/motor skills can't keep up. So at night for safety, Jingle and Meatball sleep in the basement playroom.

Hope you enjoy the pictures. Anyone who has loved Meatball Monday will agree they are so very cute.
Love,
